Re: Quick dinner recipes-please post
this takes 25 minutes - start to finish - I promiseSAUTEED PORK CHOPS WITH MUSHROOMS, DILL, AND SOUR CREAM
These pork chops go well with rice with julienned carrots.
Active time: 20 min Start to finish: 20 min
4 (1/4- to 1/3-inch-thick) boneless pork chops (2/3 lb total)
2 tablespoons unsalted butter
1 small onion, halved lengthwise and thinly sliced lengthwise
1/4 lb mushrooms, cut into 1/4-inch-thick slices
1/3 cup sour cream
1/4 cup water
2 tablespoons chopped fresh dill
I used 1 large teaspoon of dried dill instead of fresh
Pat pork dry and season with salt and pepper. Heat 1 tablespoon butter in a 10-inch heavy skillet over high heat until foam subsides, then sauté chops until browned and just cooked through, about 1 1/2 minutes on each side. Transfer chops to a platter and keep warm, covered.
Reduce heat to moderate and add remaining tablespoon butter to skillet. When foam subsides, cook onion and mushrooms, stirring, until tender, about 6 minutes. Reduce heat to low and stir in sour cream, water, any meat juices that have accumulated on platter, dill, and salt and pepper to taste and cook, stirring, until heated through. (Do not let boil.) Spoon sauce over chops.
Makes 2 servings.

Chicken Piccata:4 Boneless, Skinless Chicken Breasts, flattened thin
1/2 Cup Flour
Salt & Pepper
3 Tablespoons Olive Oil
2 Tablespoons Butter
For The Sauce:
4 Tablespoons Butter, Room Temperature
1-2 Tablespoons All-Purpose Flour
1/3 Cup Dry White Wine
1/4 Cup Fresh Lemon Juice
1/4 Cup Canned Low-salt Chicken Broth
3-4 Tablespoons Drained Capers
1/4 Cup Chopped Fresh Parsley
Salt & Pepper
To prepare the sauce, in a small pot, add the wine, broth, and lemon juice. Heat until bubbling. Reduce the heat until simmering, mix the flour into the 4 tablespoons of butter, and using a whisk, begin to add this mixture into the hot liquid, stirring constantly. Once thickened remove from the heat and add the capers and parsley. Season with salt and pepper as needed. Keep Warm.
Season the flour with salt and pepper and dredge in the seasoned flour. Heat the oil and butter in a heavy frying pan, and add some of the chicken pieces to the pan, and cook in batches. Cook for 2 to 3 minutes on each side over medium heat, until the chicken is lightly browned and cooked through. Return all of the cooked chicken to the frying pan, and pour the prepared sauce over the chicken. Mix lightly to coat, and serve.

Got this off a Ragu jar! It's delish...Chicken/pasta with sundried tomatoes and creamy parmesan sauce
You will need:
Chicken cutlets (sliced up)
pasta (whatever shape you like)
1/2 - 1 cup Sundried tomatoes (or 1 regular tomato diced)
1 jar Ragu Garlic parmesan sauce
1.Brown the chicken lightly in a tsp. of oil in a frying pan
2. Add the Ragu sauce & tomatoes - cover and let simmer for about 10 min. or until chicken is no longer pink inside
3. Make pasta while chicken is simmering...
4. Pour chicken and sauce mixture over pasta and you're done...it's really good and super easy!

Re: Quick dinner recipes-please post
Angel Hair Pasta, Veggies and ChickenCook a pound of Angel Hair - this pasta cooks up quick 2 mins.
In a separate pan, saute chicken strips until white (or buy chicken shortcuts and add at the end since they're precooked) in 3 tablespoons olive oil. Add crushed garlic, carrots and broccoli florets -thawed, add 2/3 cup chicken broth, cook for several mins until not frozen. Add Parmesan cheese - I like Locatelli and dry basil.
Put pasta in bowl, toss the chicken, veggies mixture in the bowl over pasta. Add more parm cheese and some ricotta to taste. It's a nice summer dish.
Takes a half hour....
I also serve tomato salad with this....
Sliced tomatos, vidalia onions, dry basil in extra virgin oilve oil and balsamic vin. to taste.
Prep time. 5-10 mins....

Re: Quick dinner recipes-please post
Mac & Cheese with Tuna Casserole1 box Velveeta Shells & Cheese
1 can Chunk Light Tuna in Water
Bread crumbs
1/4 cup milk
Prepare Shells & Cheese following directions on box. Add milk, mix well. Drain tuna, then dump the tuna onto a plate and 'shred' with a fork so that it's not all clumpy. Mix tuna into Shells & Cheese. Top with bread crumbs. Bake for 20-25 min. at 350 degrees or until slightly browned on top.
I usually have that with a salad and that's it - it's very filling.

Re: Quick dinner recipes-please post
Ok...This is what I usually do, instead of heavy cream I use fat free half and half (less oily) and 3/4 of a stick of butter. In a small sauce pan I let this simmer a little and it will get a little thick while stirring. In the meantime you boil the pasta. After the pasta is done put it back in the pot and you can now throw in the sauce. I usually add the parmesan cheese after because this way I can figure how much I need while I mix it all in. After that a little salt and fresh ground pepper to taste. If you are confused let me know because I am not good at giving directions.
This literally takes 15 minutes from the moment the water for the pasta startes boiling.
ETA: This is for 1lb of pasta.
