Re: Avocado dip recipes
I spent a summer perfecting my guacomole
I do it all by memory and taste, but I'll try to write it down.2 tender (not squishy) avacadoes - the small dark ones.
Onion - chopped (about half a small onion or to taste)
Fresh Cilantro - chopped (a handful) This ingredient is essential!
Fresh Garlic - a clove or two - pressed through a garlic press
Chopped Tomato (remove the seeds and excess liquid)
Lemon juice (optional)
Salt
Cut the avocados in half, lengthwise with the skin on.
Twist to separate and remove the pit.
Hold a half in one hand, skin against palm, and with a small knife, cut into the avocado in a cross hatch (down the length, then across) so you have chunks about a half inch in size.
Scoop out with a large spoon into a bowl
I use a pastry blender (those curved wires on a handle) to chop the avocado a bit more. The idea is to mush it some, but still leave a bit of chunkiness.
Add the tomato, onion, garlic, cilantro and salt. Mix more with the pastry blender to desired consistency - I like it thick and a bit chunky, kind of like oatmeal. You can add a touch of lemon juice too, if the flavor of the avacado is a bit weak and it needs a punch.
Eat immediately! I love Guacamole, so by my standards - this recipe serves ONE!!!
