Don't have any quick ones, but to watch the carbs, replace breadcrumbs with parmesean.
For snacks, I love any kind of berries soaked overnight in cream with sugar substitute.
Sorry I don't have more off the top of my head, but hopefully that will help.

Lettuce tacos:
1 head of iceberg lettuce shreded cheese sour cream jalapenos (I get them in the can) sliced tomatoes 1/2 onion sliced 1 package of taco mix 1 pound of ground turkey, beef or chicken
prepare taco meat as per directions on envelope. I usually throw in the onions too...
then use the iceberg lettuce leaves to make a "burrito"
Beef stir fry:
thin steak cut into strips broccoli 1/2 onion peppers (red & green) soy sauce a little hoison (has sugar) and mongolian fire sauce
(you can make this with chicken too)

Sassy has the right idea. Stir fry's are great. Use beef or chicken and add low carb veggies (broccoli, green beans, mushrooms, scallion, baby corn, etc) and some lite soy sauce. I usually add some garlic and ginger to it. Yummy!
