I need some dinner recipes with Chicken or Fish
My DH and I keep eating pasta and we both want to try to eat some chicken or fish at home. Please let me know if you have any good recipes.

A few weeks ago FH and I made really good chicken. We slit open chicken breasts, like a pocket and not completely open. Then we stuffed them with a mixture of diced tomatoes, mozzarella, garlic and basil. Hold them closed with toothpicks and lightly spread them with mayo all over (instead of egg for more flavor). Then dip them in seasoned bread crumbs and bake. They came out great and it wasn't too hard.
I love fish but never cook it b/c the "aroma" carries throughout my tiny apartment!!!

I have made this a few times - I got the recipe from Allrecipes.com, but I think someone may have posted it on here a while back. It is delicious and easy. This recipe is meant to serve 6 - so you can cut it down or make extra for leftovers.
Braised Balsamic Chicken
6 skinless, boneless chicken breast halves ground black pepper to taste 1 teaspoon garlic salt 2 tablespoons olive oil 1 onion, thinly sliced 1/2 cup balsamic vinegar 1 (14.5 ounce) can diced tomatoes 1 teaspoon dried basil 1 teaspoon dried oregano 1 teaspoon dried rosemary 1/2 teaspoon dried thyme Directions 1. Season chicken breasts with ground black pepper and garlic salt. Heat olive oil in a medium skillet, and brown the onion and seasoned chicken breasts. 2. Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes.
