Baby's Breath on a Cake??

What do you all think of baby's breath? I just ordered my cake and it is a three tier vanilla cake with chocolate and vanilla creme filling and whipped cream icing...

The bakery told me it would be much cheaper to order the tiers separated by columns and he is going to fill the spaces with Baby's Breath and create a cascade of roses on the outside of the cake...

I'm not so sure about the baby's breath...The baker said it will be beautiful, but I just had my florist take the baby's breath out of all of my CPs...

Have you ever seen or heard of a cake like this??
