Starting to pick the menu... Help with picking chicken dish!
We have it down to Chateau briand as the meat, salmon with dill sauce for the fish, and cannot decide on the chicken-The choices are- Chicken Frances,Chicken Foriestro- Boneless chicken with peaRL ONIONS,MUSHROOMS in a madiera wine sauce, stuffed capon- not really thrilled with this everyone has it, and chicken picata- white wine, lemon and butter with fresh artichokes and chery tomatoes. I am leaning towards the chicken frances but would like your opinions if you had to pick a chicken dish at a wedding what would you get? Thanks!

Chicken Frances everyone is familiar with and it's not so foreign.....people know what it is and they know right away if they do or don't like it

I'm a really picky eater...so you really can't judge by me...but I would pick Chicken Frances. That's the only one I would actually eat. This is bad....because I'm so picky, I usually eat before I go to a wedding, because I never like the choices!

The stuffed chicken capon sounded the best to me although I don't really know what forestiero (sp) is.... Chicken Francese is so overdone, IMO. I know it's the safe bet... but, as for me, I'm picking anything BUT that.

Chicken Frances is one of my favorites, but the chicken picata doesn't sound bad either.

I would go with the chicken picata only because the frances is so overdone...so why not be a little different

I personally would choose chicken piccata.

What tasted the best ? Did you go to a tasting ? I thought I was going to pick Salmon for my fish, but the Sea Bass was incredible, that's how I made my decision :) However, I love Chicken Francese, :) Can't really ruin it, it's a good, 'staple' dish...
