Any fast easy dinner recipe's I can make tonight!

No past apls.. had that for lunch.. I was thinkin maybe meatloaf.. need some ideas if possible. Thx!

turkey meatloaf!

ground turkey (jenny o's is great)
chopped onions (i use half)
1 egg
chicken stock
breadcrumbs
steak seasoning


I mix everything together .. I dont have amounts I just eyeball it. I use the chicken stock at the end to make sure its very moist after mixing rest of ingredients.

Put in loaf pan.

In a small bowl I mis spicy brown mustard, bbq sauce and ketchup. With a pastry brush I put this all over the top (again just eyeballing)

Bake at 350 for about 50-60 minutes


Its so moist and good!

Meatloaf Muffins with Barbecue Sauce

Ingredients
1 2/3 to 1 3/4 pounds ground sirloin
1 medium onion, cut into chunks
2 ribs celery from the heart of the stalk, cut into 2-inch pieces
1 green bell pepper
1 large egg plus a splash of milk, beaten
1 cup plain bread crumbs
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire sauce
Vegetable oil or extra-virgin olive oil
Micro-way-cool Bacon and Green Beans, recipe follows
Smashed potatoes and cream cheese, recipe follows
Directions
Preheat oven to 450 degrees F.

Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through. While meatloaf muffins bake, make green beans in the microwave. Serve meatloaf with Smashed Potatoes and Cream Cheese on the side, too


Smashed Potatoes and Cream Cheese:

2 1/2 pounds small red potatoes or baby Yukon gold potatoes

1/2 cup half-and-half or whole milk

8 ounces plain cream cheese or veggie cream cheese, cut into pieces

10 chives or 2 scallions, chopped or snipped with kitchen scissors

Salt and pepper

Boil potatoes until tender, 15 minutes. While the water boils and when the potatoes are cooking, you can be working on the meatloaf recipe.

When the potatoes are tender, drain them and return them to the hot pot to let them dry out a bit. Mash potatoes with half-and-half or milk using a potato masher. Add in the cream cheese and smash until the cheese melts into the potatoes. Then add chives and scallions and season with salt and pepper, to your taste.

Yield: 6 servings

Prep Time: 5 minutes

Cook Time: 25 minutes

TURKEY MEATLOAF

1 cup breadcrums
1 cup skim milk
1 medium onion, peeled (I like to dice and sautee in olive oil frist)
2 pounds ground turkey breast
1 egg, beaten
2 teaspoons Worcestershire sauce
Salt Pepper and Garlic to taste
shredded cheese of choice

Preheat the oven to 350.

In a small bowl, stir together the breadcrumbs and milk.

In a large bowl combine the turkey, breadcrumb mixture, chopped onion, egg, Worcestershire sauce, salt, pepper, garlic and shredded cheese. Mix just until well combined.

Transfer the mixture to a baking dish and shape into a loaf. I like to top the meatloaf with bbq sauce.

Bake for 1 hour

WOW!!! This sounds amazing!!! have you ever had this before and is it pretty easy to cook? Im not a cooker so dont really know how to and need something that wont make me go 'huh' , LOL!

Sauteed Veal Cutlets YUM!!!

I made this last night...


Season flour with salt, pepper, cayenne pepper and garlic powder

coat the veal in the flour mixture (no egg dipping necessary)

extra virgin olive oil and some butter in a pan. Heat the oil and butter .. you can tell its ready by splashing some water in there, if it sizzles its ready.

Add the cutlets (dont crowd the pan - I do 2 at a time) .. Seriously like 1.5 minute on each side is all it takes. if you overcook they will be tough. They will brown quickly if the pan is hot enough.

Drain on a plate covered with a paper towel.

When ready to serve squeeze fresh lemon over them (i served them with mashed potatoes and haricot verts)

So good!!!

Also - its perfect if its a tiny bit pink in the middle. Its not like chicken that needs to be cooked through.

ROZ I am goin to try your recipe cause I think since FH is a chef he will get a kick out of the meatloaf muffins, lol. he likes little creative touches to dishes :) Thx everyone for the recipes will prob use them next week now that Im MRS. Chef!!

only thing was he thought since they were 'muffin size' he could eat 3
