Does anyone have a a REALLY Good Tiramisu recipe?

and I mean 'REALLY GOOD'. I am very picky with my tiramisu and its usually hard to even find somebody or a restaurant that does good tiramisu.

The only places I will eat Tiramisu which is good is from Umbertos of New Hyde Park and Blue Moon in Lynbrook (I think thats where it is).

I do! I just have to find it. I am actually making it for my office holiday party and I only make it once a year because it's too good to make any more often. I'm planning on looking for it tonight. If I find it, I promise to post it.

I found it. It's from a friend of mine, so all commentary is hers. I love this, and so does everyone I've ever made it for, so hopefully you will, too.

14 oz. Marscapone Cheese (you buy the 16 oz and dump 2 oz into the garbage. I know it's wasteful but it DOES make a difference)
1/2 cup sugar
4 eggs, separated
Large package ladyfingers (Savoiardi in Italian - but get the big, cookie like ones, not the tiny, cakelike ones)
3/4 - 1 cup strong brewed coffee (espresso is your best bet, you can buy it ground and make it in a regular drip machine)
4 tbsp. Brandy
1 tsp. Vanilla
Ground Cinnamon
Cocoa powder

Take a small glass or metal bowl and the beaters to your electric mixer. Place them in the freezer for a few minutes so they're really cold. Then beat your egg whites until they form peaks, but do not overbeat them until they are dry. You just want soft, billowy peaks that stand nicely up, sort of like marshmallow fluff.
In a large bowl, beat the egg yolks, sugar and vanilla until creamy. Then beat in the marscapone cheese. Carefully fold in the egg whites, making sure you don't beat the air out of them.
Take a rectangle rubbermaid and put the coffee in it. Add the brandy. Break open the ladyfingers. Get a rectangular baking dish, about 9 x 13. Dip the ladyfingers quickly, one at a time, into the brandied coffee and line the baking dish with a layer of them. Add a layer consisting of 1/2 of the marscapone/egg mixture. Sprinkle a good amount of cinnamon and cocoa powder over that. Dip another layer's worth of ladyfingers, one at a time, and line the pan with another layer over the cream. Top with remaining cream, then sprinkle liberally with cinnamon and cocoa.
Let this sit a few hours or overnight before serving.

Thank You sooo much!!!!!!!!!!!!!!! I am def going to try this this weekend and let you know. I want to try it before x-mas to decide it I want to take it to MIL's house on that day. I will let you know how it comes out.

Here is mine, and trust me, it is REALLY good.

Tiramisu - serves 12 to 15

6 egg yolks
3/4 cup sugar
1 lb. softened mascarpone
2 cups chilled heavy cream
2 tbs. rum
1 tsp. vanilla extract
2 tbs. + 2 to 3 cups brewed espresso
5 egg whites
40 - 50 ladyfingers
cocoa powder

In a mixing bowl, set over but not touching a pan of simmering water, beat the egg yolks and sugar until the mixture is pale yellow and thick ribbons fall from the whisk ( 4 - 5 minutes).
Transfer the mixture to the bowl of an electric mixer. Add the mascarpone cheese and beat until smooth and creamy (2 - 3 minutes).
In a chilled large mixing bowl, beat the cream to stiff peaks.
Add the rum, vanilla and 2 tbs. of espresso and beat until smooth.
In a clean mixing bowl, beat the egg whites to stiff peaks.
Fold the mascarpone mixture into the cream.
Add about 1 cup of the beaten egg whites and fold gently until blended.
Add the reamining egg whites and fold gently until the mixture is smooth and blended.
One at a time, submerge each ladyfinger in to the remaining espresso, then layer it on the bottom of a 6 quart glass or ceramic baking or serving dish (about 2 inches deep). Continue to form a complete layer.
Spread half of the mascarpone mixture over the soaked ladyfingers until well covered. Arrange another layer of ladyfingers, then remaining mascarpone.
Dust with cocoa powder. Refrigerate at least 4 hours or up to 1 day before serving.

It sounds like Jannshari's recipe for the filling is a little heavier since it doesn't have the whipped heavy cream like mine does (it has the whipped egg whites though). So just make what you think you'd prefer - both will be good I'm sure

Latina - for resaurants - Ponticello's on Broadway in Astoria has OUTSTANDING Tiramisu if you are ever that way.

Annie, it probably is a little heavier, but it is to die for! I may have to try your version once, too. I haven't made it with rum - only brandy. It's probably just as good either way!

Oh, I didn't mean that heavy was bad! I just meant that your filling is probably just thicker than mine. I'll have to give yours a try

I didn't think you meant that it was bad. It may very well be a more dense tiramisu. Maybe that's why I like it so much. But it's also the only recipe I've made myself. I'll definitely have to give others a try. If only marscapone cheese was cheaper!

Marscapone cheese is sweeter and, IMO, is the only cheese that will work in a tiramisu recipe.

I completely agree.

I haven't made it yet since sooo much has been going on but I want to make it soon. Maybe on Sunday. I will let you girls know.

Not to brag (OK, maybe to brag a little), I made the tiramisu for our in-office holiday party on Tuesday and it was devoured in about 5 minutes flat. We had our interoffice party at an Italian restaurant yesterday, and it was actually announced, quite loudly and much to my embarrassment, that my tiramisu kicked the ass of the restaurant's.

I can tell you that the biggest difference I noticed was in the density. My recipe is far more dense and heavy than most of those that I've had in restaurants.

Also...what kind of brandy do you use?

I usually just use whatever brandy I happen to have around (which is usually whatever I bought the first time I made tiramisu). You could use any kind, but make sure it's something you would want to drink. You only use 4 Tbs., so it's not that big an amount that you need to worry about it. Just make sure you use the real marscarpone!
