I got 'The Bride and Groom's First Cookbook' and it has a lot of easy recipes in it.

Yes I use the perdue short cuts chicken strips. The kind you add to salad. I have used the honey chicken and the italian flavored chicken and it still tastes great. Your FH/DH won't believe you made them and it is sooooo easy to make. He'll be impresssed.

I use the perdue chicken strips (southwestern seasoned) in fajitas. Just slice up some green peppers and onions and sautee them along with the chicken until hot. Serve with warmed fajitas, salsa, shredded cheese and any other fixings you like. I also buy the GOYA (brand) Black beans and rice or Red beans and rice to serve with this dinner. Both varities are really tasty.

I also use the italian seasoned strips for a quick but filling pasta dish. Just add them to your favorite pasta sause and serve over any pasta you like. Throw some shredded mozzarella cheese on top for some added flavor if you like. Add a green salad and some italian bread or Texas Toast (available in the grocery and DELICIOUS!!!) and you have a real easy meal. It jazzes up the usual pasta and sauce dinner or as the ladies at work call it 'macaroni and gravy'.

Skillet Lasagna www.hunts.com
1 pound of italian sausage -sweet crumbled and browned
Campenlla pasta by Barilla or any other small pasta noodles
2 14.5 oz Hunts diced garlic, basil and oregano tomatoes
1 small can of tomato paste
2 cups of shredded mozzarella cheese


(You can easily adapt this receipe with turkey sausage and lowfat cheese)

In skillet brown crumbled sausage, drain, add all tomato products and simmer for 5 minutes. In large skillet layer pasta, cheese, aand sausage/tomato mixture, until all layered, put more cheese on top and cover with skillet cover place on medium heat until cheese is melted, approx 10-15 min. Enjoy ! Serve with bagged salad and bread.


I made this and Fh and I thought it was great!

Just wanted to say...

Thanks to Jen_n_Dale and FranM. I made both the quesadillas and the Chicken Marsala. They were very yummy (and easy)! I appreciate the great suggestions and instructions for dummies like me...

You should share your recipe for the chocolate cake. Is is anything like the Carlyle's? That is absolutely divine!!
(ok, so that explains why I need those exercise videos!)

A received a wok as a gift last year and use it to make really quick meals. The most frequent dish I make is stir-fired chicken and vegetables.

Wok on medium-high heat, add peanut oil
In hot oil, add pieces of chicken (about 1- 2 inches in length), cook for about 3 mintues. Add veggies such as broccoli, carrots, onion, red and green peppers, cook until tender but do not overcook. It's great to add one of Emeril's stir-fry sauces.

Cluelessbride!! that sounds great, i think i will try it tonight!!! I have a wok and NEVER use it, do i need to cook it with the cover on?

Linguine with pesto, potatoes and green beans

Bring a large pot of water to boil. Add salt, 2 medium size potatoes that have been peeled and diced, and 1/2 lb. of fresh green beans (trimmed and cut into diagonal pieces).

Cook until veggies are al dente-about 4-5 minutes

Add 1 lb linguine, stir, cover and bring back to a boil.When it boils, uncover, stir and cook another 3-4 minutes, 'til pasta is al dente.

Drain in a colandar, reserve 1/2 cup of cooking water.

Return pasta and veggies to pot.

In a separate bowl, combine 1/2 cup of pesto sauce (make yourself or buy prepared) with some of the cooking water, just enough to make it smooth. Pour over pasta/potatoes/beans and stir.

Shake a little locatelli cheese over the top and serve!

We love one pot meals
