Kick A$$ BBQ Wings

The key to this is marinate, marinate, marinate ladies..

My Measurements are not exact because i never seem to make the same size batch sooo..

For the Honey BBQ version

1 Bottle of Store Bought BBQ Sauce, I usually by Kraft but anyone will do. To this you add the following

1 Cup of Apple Sauce
2 Tablespoons Karo Syrup or Pancake syrup in a pinch (if you like them less sweet, use honey instead)

I mix it up in a bowl and put it to the side.

Then I clean and cut up the chicken wings (sometimes the supermarket will carry 'buffalo wings' which are just the chicken wings cut up into two pieces, much easier than cutting them yourself, but worth the effort especially if your serving them as finger food.)

I take the cleaned up wings and season them with adobo (you can use salt & pepper) and garlic powder.

I split up the wings into two large ziploc bags and pour half the BBQ sauce into each bag. I zip them up and put them in the fridge over night.

The next day, lay them out on cookie sheets (covered with foil or you will be scrubbing for days! lol) and bake at 350 until cooked through, I suggest letting the sauce dry up, so that they get that sticky consistancy

For the hot and spicy version just add hot sauce to the the BBQ mixture, depending how hot you want them

Enjoy!!

Could this work for chicken breasts -- I do lots of marinades but am not a big wingy person.

I made my own pizza sauce the other night, it was VERY good...I would next time though add a little bit more sauce( it was spicy) But yum yum...

Real Pizza Sauce
2 15oz cans of Hunts tomato Sauce
3/4 cup of oil
2 tablespoons of Parmesean cheese
1 tablespoon of oregano
1 tablespoon of dried parlsey
1 tablespoon of garlic powder
1 teaspoon of salt
1 teaspoon of pepper
1 tablespoon of sugar

put in blendar and blend for about 25-30 seconds...yum!!!

Another one( good for Atkins, took from South Beach actually)

Chicken Egglplant bake ( casserole)

1 eggplant sliced
chicken breats( amount to liking) cut up and cooked
Mozzerella cheese
Parmesean cheese
1tablespoon parsely
salt
pepper
8oz jar of tomato sauce
garlic powder

Slice eggplant and place in broiler for 3 minutes, turn over, top with parmesean cheese and garlic powder, cook for 2-3 more minutes
Cook chicken and add sauce when cooked, parsley , salt ,pepper and any other seasonings...
In a casserole dish place 1/2 the eggplant slices, top with chicken and sauce mixture ..layer remaining eggplant slices and top with mozzerella cheese. BAke at 375 for about 20-30 minutes.
