I just wanted to 'clarify' a few key points EVERYONE is missing:1) just b/c the chef left doesn't mean that the food is going to change - do you honestly think the CHEF makes EACH AND EVERY SINGLE plate there??? Um...no....otherwise, everyone (300 people) would be waiting on food for at least 8 hours.
2) That being said...the CHEF trained others to work under him and 'passed' the knowledge down to others, so rest assured, that your meal is being prepared as a general whole rather than individually, so one 'bad' plate among many 'great' plates, is going to happen. We all have different tastebuds!
3) Thank you for your honest opinions in regards to your feedback at the wedding you attended (Laura) - but sometimes there might be an off day. If you or anyone is worried about the food, I suggest going for a food tasting (attending the restaurant) and making an assessment from there.
4) I have been to FH, Chateau, WM numerous times for various events (including the ones hosted for brides/grooms) and I have YET to hear a negative statement about the food (overall.)
So...let's not freak out b/c the chef 'might' have left - speak to your BM's, speak to the OWNERS, schedule a tasting, and TAKE IT EASY, have FAITH in the hall you picked!

as always you are the voice of reason...my FMIL told me the same thing and it calmed me down...of course I love Fox Hollow and I know that I may talk but I'll never go anywhere else, FH just fits me and my FH too well...i really can't wait to have my reception there..its perfect..unfortunately my BM left..now i have to find out who my new BM is..

Chris, you said it perfectly. Scotto's have too much of a reputation to have their food go down the tubes. I have all the confidence that if they did replace their chef, it was only with someone better...and i also don't believe it..because a few months back, someone posted that the chef left to work with the brother who is running the WM..so
on the source.......Regarding the filet mignon comment above..i will say this a million times...i have never been to a place where they cook your meat to your preferance, it is utterly impossible, especially when you are feeding 100's of people at one time. I was at an affair at wm and my filet came back rare, all i had to do is ask for a more well piece and they replaced it. so no one should be discouraged, everything is going to be fine. there is a reason why we chose the FH, lets keep that in mind..

the food thing could have happend because there we sooo many people in that room. and trying to feed 250-300 people at one time.it is still no excuse i agree.
my friends wedding was about a month and a half ago. the dinner wasnt the best i ever had at a wedding but it was very good. the ch food was awsome.
i had the filet as well and honestly it was a bit dry however it was brought to everyones attention afterward that the mushroom sauce that was suppost to go on it was seperate on the table it is not served on the food.

I agree with everything you said and I hope that this was just an off day of just my luck!! The Scotto's don't have a great rep for nothing!! I will talk to my BM about everything. Who knows, even if the chef was fired- maybe there was good reason and it'll help keep quality up!
On the whole 'never received perfect steak/filet mignon' comment. Up until this past Sept I might have agreed- however, I went to a wedding in NJ and the filet was one of the best I ever had anywhere...guess it raised my expectations. They were serving about 150-180 people in a cramped room and the kitchen was on the other side of the hotel. Oh well, I still love the FH and will hope for the best! Like I said, I didn't want to panic anyone but wanted to be honest.
The main thing that got me was the table collapsing/tilting next to me! If they rushed over to fix it quickly I'd chalk it up to 'these things happen' but they didn't...I think I just attended an event that had issues!! (crosses fingers)

Hey,I was married at FH over a month ago and let me tell you....after the amazing cocktail hour they throw, everyone was SO STUFFED that most people had trouble even looking at dinner.
Not to say its not important....of course we all want perfect food. I won't lie..the filet was OK. Not bad, not great. I've had better...but then again, i had trouble really eating anyways-my nerves were going so i couldn't handle much food.
I know everyone enjoyed their dinner, and no one complained. All i keep hearing is 'OH MY GOD YOUR COCKTAIL HOUR WAS AMAZING, I'VE NEVER SEEN SO MUCH AWESOME FOOD'. If anyone hated their dinner, i never heard about it!

I'm back from the PWP Tea.It was great! A lot of fun...good information...James is wonderful...and, I won a raffle!! It's a gift cert for Elsa, a jeweler who designs wedding bands!
For any of the newly engaged FH brides: Any vendor who comes onto their property MUST be insured and MUST give FH a copy of their insurance certificate. Just another thing to add to our to do lists! This only applies to vendors who are not on their recommended list.
For those that haven't gone to a PWP tea, GO!

had there cake at my friends wedding.
ummm the cake was not so good. the rasberry filling was and so was the chocolate.
i heard there yellow or white cakes are okay.
but i heard there chocolate cakes are much better.
