I am actually undecided about whether or not I am going to be taking my fiance's last name, but at the same time it was exciting for us both to see "The Future Mr. and Mrs..." on the seating chart at the wedding we went to. I do respect your words of caution; however, I still did really love seeing it (this was just my opinion.)

Yes. Mr and Mrs. as is Mr. His first name his last name and Mrs My first name, my last name. I might not even use "mrs.", eiteher.
yes, it does offend me that people would ASSUME I'm taking FH's name. I'd get over it and just chalk it up to ignorance, but it does offend people who don't believe in becoming someone else's property.
i would not get offended nor do i think any of my friends would be

Our guests raved about everything DH and I did.... the cry packets, butterfly release, programs, favors, Starbucks coffee bags, the place card flowers. We received compliments all day long - and every person we have talked to since has told us how great everything was.... so the guests DO notice when there are "extra details" around, but prolly won't notice them if there isn't.
