Easy recipes?

Ok, I admit it...I CAN'T COOK!!!! Does anybody have any easy and healthy receipes to pass on!! I'd really appreciate any help I can get. Thanks!!!!!

This is if you like quesadillas.... I buy the mission tortillas burrito size which are in the refridgerated section at your local grocer... Fine shredded taco/nacho/cheddar/whatever cheese. Place on a frying pan and put on medium heat, put cheese on half a side and flip over the other side. Cook until cheese is melted. You can add perdue sliced chicked shortcuts. (any flavor will do). Use sour cream or your favorite salsa to dip in.

I made this tonight - very easy and quick and only one pan

Chicken Marsala
4 thin cut chicken cutlets
2 cups sliced mushrooms
3/4 cup marsala wine
1/4 cup water*Dredge chicken in flower
flower
rosemary (optional)
olive oil

*Dredge chicken in flower
*In a large skillet cook mushrooms in olive oil until done- Set aside
*Add chicken to skillet and cook through 4 - 5 minutes - Remove chicken
*Return mushrooms to skillet and add marsala wine water and rosemary, on med heat wisk until slightly thickened (you may need to add a little flour)
*Pour sauce/mushrooms over chicken and serve.

Fran M - you have way too much faith in us. What is the definition of a thin cut chicken cutlets? Do we take a boneless chicken breast and cut it or buy it that way? What does Dredge mean? LOL

just in case you are not kidding

a chicken cutlet is a boneless breast of chicken.
dredging is where you place some flour on a plate and put the chicken in the flour, so the flour sticks to the chicken, and then you turn the chicken over, and coat the other side.

theres always takeout!!!

Perdue sells two cuts of Chicken Breast and one is thin-sliced. It says it on the package. You can get it in the regular grocery store.

Here is the guacamole recipe (FH eats it without anything else quite often):

1 Avocado - mashed
Half of a medium tomato (or even less, depending on size of avocado)
Half of a medium onion (preferably, red)
Some cilantro
Juice of half of the lime
A spoon or 2 of sour cream

Mix it all up and serve with whatever mexican food you like!!!

I also loove goya's chunky salsa's

Shockingly dubliner, I wasn't kidding. :o) I'm actually a fairly adventurous cook (just made molten chocolate cake for the first time last night, mmm mmm) but I just don't yet have a big vocabulary of cooking terms! So, I tend to pick my recipes based on the ones that use only words I know. hehe. Thanks for clarifying, now I have two more words in my vocabulary!

LOL Valenia - I have to say Fran's recipe is great and I have made it lots of times. And this is coming from a woman who set the stove on fire with spaghetti!

For the quesadillas (chicken) do you just add cut up chicken breat or is the "sliced chicken shortcut" something that you buy?

Last night, I baked chocolate chip cookies for FI and we wrapped it up and he took them to work this morning for his office.... They were wonderful! For me, who doesn't cook, this was a huge deal!!!

Good Reference Book for Cooking

A good reference to have on hand is the Betty Crokers Cookbook. It has definations of many cooking terms and basic information like how to calculate cooking time based on weight, food storage tips etc. Of course it also has a lot of recipies.

I have the joy of cooking but another I would recommend is How to Cook Everything. It also tells you how to store things and cut things and defines many terms. I pretty much know how to cook and actually like to cook and still enjoyed this book.

Also, for quick recipes, sometimes at the supermarket by the checkout you will see some little mags for a couple dollars that give you quick recipes ideas.

Betty - Perdue sells sliced cooked chicken. It is really good for quesadillas and salads. It is usually in the meat section in the supermarket and they even sell different flavors. I think the regular one the best.

Yes I use the perdue short cuts chicken strips. The kind you add to salad. I have used the honey chicken and the italian flavored chicken and it still tastes great. Your FH/DH won't believe you made them and it is sooooo easy to make. He'll be impresssed.

I use the perdue chicken strips (southwestern seasoned) in fajitas. Just slice up some green peppers and onions and sautee them along with the chicken until hot. Serve with warmed fajitas, salsa, shredded cheese and any other fixings you like. I also buy the GOYA (brand) Black beans and rice or Red beans and rice to serve with this dinner. Both varities are really tasty.

I also use the italian seasoned strips for a quick but filling pasta dish. Just add them to your favorite pasta sause and serve over any pasta you like. Throw some shredded mozzarella cheese on top for some added flavor if you like. Add a green salad and some italian bread or Texas Toast (available in the grocery and DELICIOUS!!!) and you have a real easy meal. It jazzes up the usual pasta and sauce dinner or as the ladies at work call it "macaroni and gravy".

Skillet Lasagna www.hunts.com
1 pound of italian sausage -sweet crumbled and browned
Campenlla pasta by Barilla or any other small pasta noodles
2 14.5 oz Hunts diced garlic, basil and oregano tomatoes
1 small can of tomato paste
2 cups of shredded mozzarella cheese


(You can easily adapt this receipe with turkey sausage and lowfat cheese)

In skillet brown crumbled sausage, drain, add all tomato products and simmer for 5 minutes. In large skillet layer pasta, cheese, aand sausage/tomato mixture, until all layered, put more cheese on top and cover with skillet cover place on medium heat until cheese is melted, approx 10-15 min. Enjoy ! Serve with bagged salad and bread.


I made this and Fh and I thought it was great!

Thanks to Jen_n_Dale and FranM. I made both the quesadillas and the Chicken Marsala. They were very yummy (and easy)! I appreciate the great suggestions and instructions for dummies like me...
