I'm trying this recipe out tonight - I got from my sister's book The Carbohydrate Addict's Diet

CREAMY MUSHROOM CHICKEN


Ingredients:
Serves 2

2 tblspoons of olive oil or vegetable oil
2 chicken breast halves, skinned
1 cup of sliced fresh mushrooms
2 tablespoons of finely chopped onions
2 cups of sour cream
2 tablespoons of dried rosemary or dried basil
black pepper to taste
1 cup of chicken or vegetable stock


1. Heat the oil in a skileet until hot.
2. Add the chicken breasts and brown on both sides until it is cooked through.
3. Remove the chicken from the skillet and set aside.
4. Add the mushrooms, onion and garlic to the pan and sauté until brown and the mushrooms have given up their liquid.
5. Return the chicken to the pan.
6. Stir in sour cream, rosemary and black pepper to taste
7. stir in bouillon and simmer everything over very low heat for 3-4 minutes.

ETA: Ok I made the recipe, and I must say it was pretty good. I made a few changes though.

1. I did not add the rosemary because DH and I are not big fans of it.
2. I stirred in the sour cream and chicken stock before adding the chicken breasts back in.

TIP FROM ME: This recipe makes A LOT of sauce. You don't need to double it for extra chicken breasts. I used three chicken breasts -cut in half (6 pieces) and I had more than enough sauce.
