Re: Refried beans...

I've made 'one pot' tacos! I brown ground chicken or beef in a saute pan and then I add:

Chopped tomatoes (or salsa)
Beans
Avocado
light sour cream
chili powder
Trader joes fire roasted corn
Whatever else fits in the mix...veggies, cheese, etc...

I stir it all around and either scoop it on a plate or toss it in a whole wheat wrap.

It kinda looks like poop but it tastes delish!

I used to break out 10-12 pots/dishes when making tacos and DH calls me 'tsumani chef' so I decided to tone it down and throw everything into one pot.....

Re: Refried beans...

um i usually eat them as a side dish. slice up some jalapenos and toss them in when you heat them up. i top with a dollop of sour cream (ok, sometimes like a tub of sour cream) when the come out of the microwave. and maybe some shredded mexican cheese (you know, like the sargento bag o cheese).

annnnnd now i want refried beans.

Re: Refried beans...

Ehhh... I didn't have any sour cream so I just put shredded cheese and jalapenos on top and mixed i all around.

It was still good!

Def could've used some sour cream and diced tomatoes though.

Oh well!
