here is my favorite...i had it posted on the recepie boards but here it is for those of you who dont look at that lol!!!
Spinach Artichoke dip (it is so yummy every time someone has a party they make me bring it!!!)
1 (14 oz) can artichoke hearts, drained, and roughly chopped
1 (10 oz) box frozen chopped spinach, thawed
10 ounces prepared Alfredo sauce
1 cup shredded parmesan-Romano cheese blend
1/2 cup shredded mozzarella cheese
4 ounces (1/2 pkg) cream cheese, softened
1 teaspoon minced garlic
Combine ingredients thoroughly in a bowl and spread mixture into a small baking dish.
Bake in an oven preheated to 350 degrees for 30 minutes or until cheeses are bubbling and melted.
Serve with Chips or breads
Im totally making this...my aunt loves artichoke dip!

RECIPE NAME: Simple Chicken Cordon BleuINGREDIENTS:
1lb (or more) of chicken cutlets
Italian Breadcrumbs
1/2lb (or more) of Prosciutto
Fontina Cheese (normally can be found at Stop & Shop in the cheese case near the deli)
Toothpicks!
DIRECTIONS:
Lay the each chicken cutlet in the Italian Breadcrumbs, lay one peice of the prosciutto and one peice of the Fontina Cheese on the un-breaded side of the cutlet. Roll the cutlet up with the prosciutto and Cheese on the inside and fasten together with a toothpick. Do this with all chicken, procuitto and cheese. Place in a glass baking dish and cook at 375 for 20-25 minutes.
**My FH is a very picky eater but love Chicken Cordon Bleu... I had to tell him that it was regular ham and swiss on the inside instead of the prosciutto and Fontina so that he'd eat it... HE LOVED IT!!!!!!

RECIPE NAME: Sloppy JoesINGREDIENTS: 1 Package of lean ground beef~1 onion~1 clove of garlic~1 yellow pepper-beef stock~can of tomatoe paste
DIRECTIONS: Put a little EVOO (Extra Virgin Olive Oil..I watch too much Rachael Ray!) into a pan. add chopped onion, garlic and pepper. let that cook for a minute and add your meat. Once the meat is brown add the tomatoe paste and let that cook for a few minutes. Then add some beef stock and let it cook for about 12 min. Once you're done slap it on a burger bun and you'll never want to eat anything else again! HA

Another recipe. DESSERT
Ingredients:
Bananas
Vanilla Ice Cream
Sugar
Directions:
Peel and split the bananas down the center. Coat the cut side in a layer of sugar (I didnt say this was low fat), place on a grill pan until caramalized (brown and gooey). Place on a plate and put a scoop of vanilla ice cream in the center! YUMMY. You can use Apricots, Peaches & Plums to.
ETA: to add another recipe!

this is a great thread!RECIPE NAME: Spicy Shrimp Scampi
INGREDIENTS:
12 jumbo shrimp, peeled and deveined
3 Tbsp olive oil
2 Tbsp lemon juice
2 Tbsp white wine
1 tsp salt
2 Tbsp minced garlic
3 Tbsp unsalted butter
1 Tbsp red pepper flakes, more to taste
2 Tbsp chopped parsley
DIRECTIONS:
Heat the olive oil in a medium-sized skillet. Over medium heat, add the shrimp. Cook about 3 to 4 minutes. Add the garlic, pepper flakes, lemon juice, wine and salt. Cover and cook for 3 minutes. Uncover and beat in the butter. Remove from heat and mix in the parsley.
Tastes great with pasta!

Easy Garlic Broiled ChickenIngredients
-1/2 cup butter
-2 teaspoons minced garlic
-2 tablespoons soy sauce
-1/4 teaspoon black pepper
-1 tablespoon dried parsley
-6 boneless chicken thighs, with skin
-dried parsley, to taste
Directions
-Preheat the oven broiler. Lightly grease a baking pan.
-In a microwave safe bowl, mix the butter, garlic, soy sauce, pepper, and parsley. Cook 2 minutes on High in the microwave, or until butter is melted.
-Arrange chicken on the baking pan, and coat with the butter mixture, reserving some of the mixture for basting.
-Broil chicken 20 minutes in the preheated oven, until juices run clear, turning occasionally and basting with remaining butter mixture. Sprinkle with parsley to serve.

RECIPE NAME: Rainbow CookiesINGREDIENTS: *(For Each Layer)* There are 3 layers
4 Eggs
1 Cup of Sugar
1 Cup of Flour
2 Sticks of Butter or Margarine melted
1 Teaspoon of Orange Rind
3 Teaspoons of Almond Flavor
DIRECTIONS:
Grease and Flour 1' lip pan.
*I find an 11.5 x 17' pan works best
Beat eggs and sugar well
add flour, orange rind, melted margarine
Mix well and add food coloring (red,yellow,green being the traditional)
bake 10-15 minutes
Between the layers spread apricot jam (not too much!). When all the layers are together, cut them into 1.5' strips. Melt chocolate chips in a double boiler with 2 drops of oil mixed in. Spread on top, and when the chocolate hardens cut into cookie size pieces.

Deviled EggsINGREDIENTS
6 eggs
1/2 teaspoon salt
1/2 teaspoon paprika
2 tablespoons mayonnaise
1/2 teaspoon honey mustard
DIRECTIONS
Place eggs in a pot of salted water. Bring the water to a boil, and let eggs cook in boiling water until they are hard boiled, approximately 10 to 15 minutes. Drain eggs, and let cool.
Cut eggs in half, lengthwise. Remove the egg yolks and mash them together in a small mixing bowl. Mix in the salt, paprika, mayonnaise, and mustard. Spoon mixture into the egg shells, cool and serve.

Angela's Slow Cooker Chicken & Stuffing1 SLOW COOKER....
1 package of chicken breast
1 cup uncooked stuffing
1 can of cream of chicken soup (condensed)
1/4 can broth
First 'whiten' the chicken in a frying pan....i just coat it with a little bit of EVOO....just get it white...don't cook it through
I cut the chicken breast into 2' chunks, but you don't have to
Layer slow cooker:
Chicken
soup
broth
stuffing
Cook it all day (min 2 hours)
JUST SET IT AND FORGET IT GIRLS!!!
Everyone loves this...actually...im gonna make it tomorrow!!
I <3 my slow cooker!!!!!!
(p.s.: use regular stuffing or it may taste salty)
MISC info: so easy....can be WW friendly if you use low fat or FF soup and low sodium stuffing :)
