RECIPE NAME: Nutella CheesecakeINGREDIENTS:
Graham cracker crust or other “cookie base
2 8 ounce packagaes of Cream cheese plus another 4 ounces of cream cheese
1 14 0z can of Condensed Milk
2 eggs
1 teaspoon of Vanilla extract
1 750 g jar of Nutella You can use 500g but 750 g gives a better taste…
DIRECTIONS:
Prepare crust and put aside, in a Medium Bowl mix the Cream Cheese until smooth and creamy(tip the softer your cream cheese the better as it won't leave white little lumps throughout). Add the condensed milk then beat in eggs and vanilla. Beat in the nutella. Pour into crust and Bake 1 hour at 165 c until center is set allow to cool at room temp. Then refrigerate at least 4 hours before serving.
MISC. INFO: This
cheesecake tastes even better if you wait at least 24 hours before serving...

RECIPE NAME: Macaroni with Red Sauce & PeasINGREDIENTS:
Macaroni - the curly kind

Oil
Tomato Sauce
Salt
Pepper
Garlic
Onion
Peas
Mozzarella Cheese
(you can also make this as a meat sauce by adding ground beef)
DIRECTIONS:
Sautee garlic and onion in a little bit of oil in a saucepan. Add the tomato sauce and your other seasonings (some people add carrot or celery to their sauce to cut bitterness, some add salt, pepper, italian seasoning, etc.) so just add whatever you usually put in your sauce. Then after the sauce has been cooking for awhile you add in the peas. Then start cooking the macaroni. Chop up the mozzarella (I usually buy the block for this, not fresh mozzarella) into thin strips. Strain the macaroni when it is done and combine the macaroni, sauce and mozzarella. The mozzarella will melt and become stringy from the heat (the curly macaroni makes the cheese stick better in my opinion).
ta Da! simple and easy - and a little different than just plain red sauce......you can also add ground beef to this recipe!

RECIPE NAME: Sausage Spinach PieINGREDIENTS:
1 lb sweet Italian sausage
6 eggs
2 10oz pkgs frozen chop spinach (thawed drained)
1 16oz mozzarella cheese (diced)
2/3 cups of ricotta
1/2 tsp. salt
1/8 of pepper
1/8 tsp. garlic powder
1tblsp water
Pillsbury pie crust (Red box-not frozen)
DIRECTIONS:
Remove sausage from skin. Brown in small amount of oil and break up into small pieces. Cool then add to large bowl. Then add eggs, spinach, mozzarella, ricotta, salt, pepper, garlic powder and water.
Line pan with pillsbury pie crust (so get a round silver aluminum tray), Fill with sausage/spinach mixture. Cover with remaining pie crust.
Bake in oven on 375 degrees for 1 large pan = 1 1/4 hour
2 pie pans = 50 minutes

RECIPE NAME: Chicken Marsala (easy but yummy) -- this recipe will serve 2-3 peopleINGREDIENTS:
3 chicken breasts (appx 1.5 lbs)
4 tbsp salt
4 cups water
1 cup marsala wine (sweet)
4-6 oz mushrooms (sliced)
4 tbsp heavy cream
2 tbsp oil
pepper
DIRECTIONS:
1. 'brine' the chicken breasts in a ziploc baggie with 4 cups water and 4 tbsp for one hour. This will make them plump up and absorb water so that they will be extra tender when cooked, and won't dry out. After 1 hour is up, rinse them off with water so they wont be too salty, blot dry and season with pepper. You can probably skip the brining step, but I did it and the chicken was so good! It wasn't hard to do either.
2. heat 2 tbsp of oil and 'pan fry' the chicken breasts on each side until cooked through. then remove and put on a plate. leave any residue from cooking the chicken.
3. add mushrooms into the pan, spread out into 1 layer and let cook for appx 1 min.
4. add the 1 cup of marsala wine, mix around and reduce (not fully, but let it thicken a little).
5. add the 4 tbsp of heavy cream, mix in fully, and let reduce.
6. add the chicken back into the sauce/mushrooms to heat and coat. Serve.
MISC. INFO: So good that FH told me he wanted to invite his parents over for dinner and serve this! Very good the next day as leftovers too. If you'd like to serve with pasta (fettucine is good) you might want to make more sauce. After you serve the chicken/mushroom/sauce mixture you can probably add another cup of marsala wine, stir and reduce a little, then add another 4 tbsp of heavy cream, mix, reduce (but not fully) and pour over pasta.

RECIPE NAME: Fudgy Brownies (courtesy of Everyday Food)INGREDIENTS:
1/2 cup (1 stick) unsalted butter, plus more for foil
8 ounces semisweet chocolate, chopped
1 1/4 cups sugar
3/4 teaspoon salt
3 large eggs
3/4 cup all-purpose flour (spooned and leveled)
1 cup chopped walnuts or pecans (optional)
DIRECTIONS:
1. Preheat oven to 350°. Line bottom and sides of an 8-inch square baking pan with foil; butter foil. Set aside.
2. Place butter and chocolate in a medium heatproof bowl set over (not in) a saucepan of simmering water; stir frequently, until almost melted. Remove from heat; stir until completely melted.
3. Whisk in sugar and salt until smooth; whisk in eggs. Gently whisk in flour just until smooth (do not overmix). Fold in nuts, if using.
4. Spread batter evenly in prepared pan. Bake until a toothpick inserted in center comes out with a few moist crumbs attached (they should form a ball when rolled between your fingers), 45 to 50 minutes. Cool completely in pan.
5. Use foil to lift from pan; peel off and discard. Cut into 16 squares.
MISC. INFO: these are awesome brownies that are sure to impress. i brought them in to work and everyone loved them..especially when they found out they weren't from a mix! after i made these for FH the first time, it's all he asks for when he's craving a chocolatey snack. i didn't realize they were so easy to make otherwise i would've given up the mix a long long time ago!!

Great board:For the above taco salad recipe you can also use fat-free catalina dressing.
Also,
Potato chip crusted nuggets
chicken breast (as much as you want)
sour cream and cheddar chips
1 egg
3/4 cup flour
a little salt and pepper
cooking spray
crush potato chips, coat small pieces of chicken in flour then egg then chips, place in flat layer on greased baking sheet and bake at 350 for about 30 min (flip chicken 1/2 way through)
Not too unhealthy (despite the chips) You can also use cheese-its or another type of chips

Ingredients
-1 (16 ounce) container frozen whipped topping, thawed
-1 (5 ounce) package instant vanilla pudding mix
-1 (15 ounce) can solid pack pumpkin
-1 teaspoon pumpkin pie spice
Directions
-In a large bowl, mix together instant vanilla pudding mix, pumpkin and pumpkin pie spice. Fold in the thawed frozen whipped topping. Chill in the refrigerator until serving.
*If you use libby's easy canned pumpkin it comes with the seasoning already in it and you do not need the pumpkin pie spice*

I served it with graham crackers. It's more like the consistency of the cool whip, not really a pudding. Other people that made the recipe said they dipped apples or ginger snaps in it too.
