well, last night we finished up a pile of indian food we made a couple days ago (saag paneer, this really unusual pepper, paneer, raisin, cashew, and tomato sauce dish which is REALLY yummy, and a chicken curry with about 10 spices in it )




We LOVE Indian Food. How do you make these?

oh, I've been in self-training for quite a while.

I have a cookbook I SWEAR by:
cuisines of india by smita chandra

I go to patel brothers on 106? (south of ikea by about 5 miles) for the rice, paneer, and spices....

the big thing about cooking indian is 2 things:
Dishes usually start with heating whole spices alone in oil. you have to stand over them, constantly sniffing the air for when things get fragrant, and avoid burning. If you burn, pitch it and restart.
The other key thing is to let each simmering stage go for a while. Indian food is not a 1/2 hour affair. Saag paneer tastes best if it bubbles for over an hour. When the recipe says let the onions brown, you've got to wait until they are truly french onion soup brown.... it's all about patience

other than that, just keep trying until it tastes right.... it's very torturous to do all that taste-testing

tonight is healthy chicken parm!! baked chicken (breaded) in theoven with no fat mozarella cheese and dreamfields liguini
