Yummy! We had a good-buy party for a colleague at work = free dinner for DH and I!But tomorrow I'm making chicken pesto pasta & veggies.

Everything sounds so yummy you ladies need to start posting some of these recipes for me.We had Shrimp Primavera tonight. So yummy.

Tonight we're having leftovers from last night. Indian curry chicken, chala masala (chickpeas) and roti. Yummy!

Get Thread Idea!!!!!DH & I work really late. I don't get home until 10:30/11p.m. So we try NOT to Eat Real Heavy. We usually Just Wing It.
Tonight, I had 1/2 egg whites sandwich with Turkey & Hot sauce on Seedless Roll.
DH ate Subway at work.

I have a great pasta recipe. I make it once a week and DH loves it!! Best part is it only takes like 20 minutes!Rigatoni with Red Pepper, Almonds, and Bread Crumbs
1 pound rigatoni pasta
3 cups purchased garlic-flavored croutons, (about 5 ounces)
1/4 cup slivered almonds (about 1 ounce), toasted
1 cup julienned roasted red bell peppers
3/4 cup extra-virgin olive oil
Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta into a large bowl.
Place the croutons and the almonds in a food processor. Pulse until it becomes the texture of bread crumbs. Add the crouton and almond mixture to the hot pasta. Add the peppers and the olive oil. Toss to combine and serve.
**This is a recipe from Giada De Larentis and I add grilled chicken to it!! Enjoy!!

Last night I made grilled chicken sandwich with homemade pesto sauce on challa (sp) bread with a garden salad with ginger carrot dressing and french fries. Then we went to coldstone for icecream!Tonight I'm making Steamed mussels on a bed of couscous and Tilapia with a pinapple salsa dressing.

Tonight I made Angle Hair Carbinara.... It's DH's favorite pasta dish, so I make it for him a few times a year. It's a heart attack waiting to happen so I don't make it often, but it consists ofMy MIL famous cheese sauce with sliced mushrooms, peas, and italian ham over angel hair pasta.
He was so cute when he came home. He asked what we were having for dinner and when I told him he was so happy.
