EASY, quick Chicken recipe for beginners


This is my favorite easy quick chicken recipe and the leftovers are good for additional meals. Buy all the herbs to keep on hand, then all you need is the chicken.

1 Tbs. unsalted butter (I sometimes use a bit more)
1 Tbs. finely grated onion (I usually just use dried onion bits)
1 clove garlic - crushed
1 tsp. dried thyme
1/2 tsp each salt and pepper
1/2 tsp dried rosemary
1/4 tsp ground sage
1/8 tsp dried marjoram
dash of hot pepper sauce (ie: Franks Hot Sauce)
4 skinned and boned chicken breasts

I measure loosely - don't worry about being exact on the herbs.

Heat oven to 425º

Melt the butter in the oven a shallow baking dish (ie: glass or Corningware)

Combine the onion, garlic, thyme, salt, pepper, rosemary, sage, marjoram and red pepper sauce in a small dish.

Remove the baking dish from the oven and stir the herbs into the melted butter.

Add the chicken pieces, turning to coat well with the herb and butter mixture.

Return to the oven and bake, uncovered, for 14 to 20 minutes. Juices will run clear when chicken is pricked with a fork.

This chicken is good served hot - but even better the next day, when cut up to make chicken salad sandwiches (just combine with a bit of mayo and maybe some chopped onion) The herbs give it a great flavor, so cook extra to use in any of your favorite chicken dishes.
