I have some appetizers that are always a hit and are super easy they dont have to go in if you dont think they are good just figured I would shareFried Ravioli:
1 Bag of mini frozen raviloi
2 Cups Italian Bread Crumbs
1/2-1 Cup (depending on what you like) of parm. cheese
2 eggs
Splash of Milk
1 Jar of roasted Red peppers drained
1/2 tablesppon Tomato Paste
Basil
Oregano
Salt
Pepper
Garlic powder
Olive oil
Beat the eggs with the milk, in a separate bowl mix the bread crumbs and parm cheese. Dip the raviloi in the egg mixture and then in the bread crumbs. In a frying pan heat the olive oil over medium heat. After all of the ravioli are breaded add them to the hot olive oil and fry them until they are golden brown on each side about 1-2 min per side. In a food processor chop up the roasted read peppers until the mixture looks like a sauce. In a small sauce pan heat the pepper mixture and add the tom. paste, and season as you like wtih basil oregano salt pepper and garlic powered. Heat on a low heat for about 5 minutes until flavors are blended together. Then pour into a small serving bowl along side the ravioli to be used as a dipping sauce and enjoy!!!
Brie in a Pastry
1 Round of Brie
1/4 cup of raspberry jam (seedless is best)
2 tablespoons of slivered almonds
1 Puff pastry crust
1 egg yolk
Preheat the oven to 450
Remove the puff pastry from the freezer about 10 minutes before to let it thaw. Than open the puff pastry and place the brie in the middle. Spread the raspberry jam on top of the brie and sprinkle the almonds on top. Then flod the sides of the puff pastry up as if wrapping the brie. The brie should be completely covered by the puff pastry like a little present. Then beat the egg yolk and brush it over the puff pastry, this will make the pastry goldenbrown and shiny after it cooks.
Cook the pastry at 450 for about 20 mins, or until the outside of the pastry is golden brown.
To serve place the pastry on a plate and let cool for about 2-5 minutes. Use a knife to slice, it will be a little messy, but serve with crackers and people will love it anyway!!
I also have this cream spinach recipe
1 Bag of spinach
2 tablespoons flour
1/4 cup milk
4 tablespoons butter
1/4 of and onion finely chopped
2 cloves of garlic finely chopped
Handful of shredded Mozzarella
1/4 teaspoon nutmeg
salt
Pepper
1/4 cup slivered almonds (opt)
In a small pan sautee the garlic and onion.
Melt 2 tablespoons of the butter in a deep frying pan then add the spinach gradually until all of it has wilted down. This is all down over med/low heat The add the remaining butter once that melts add the milk and gradually add the flour to thicken the mixture u may have to adjust the four and milk to get it the consistancy that you like. Add the onions and garlic and simmer. Next season with nutmeg, salt and pepper, and add almonds if usuing them. Right before serving stir in sheredded mozzarella cheese.
Healthy Chicken salad
3/4 pound cooked chicken breast, cut into bite-sized pieces
1/2 cup celery, finely diced
1/3 cup dill pickle(s),
1/4 cup reduced-calorie mayonnaise
2 Tbsp reduced-fat sour cream
2 Tbsp parsley, fresh, chopped
1 tsp Dijon mustard
1 tsp fresh lemon juice
Salt
Pepper
Place all ingredients in a large bowl; mix until blended.
Soup: Healthy Sweet Potato Soup
2 large sweet potato(es)
2 cups chicken broth (low sodium is best)
1 Tbsp reduced-calorie margarine
1 Tbsp all-purpose flour
1/4 tsp ground ginger
1 cup(s) fat-free evaporated milk
1 Tbsp chopped pecans
Preheat oven to 400ºF.
Pierce potatoes in several places with a fork. Bake for 45 minutes, remove from oven and allow to cool. When cool, remove and discard skin; chop potatoes.
Combine sweet potatoes and 3/4 cup of broth in a blender or food processor; blend or process until smooth, about 1 minute. Set potato mixture aside.
Melt margarine in a medium-size saucepan; stir in flour and ginger, and then add milk. Cook, stirring, until slightly thickened and bubbly, about 5 minutes. Cook 1 minute more and then stir in sweet potato mixture and remaining 1 1/4 cups of broth. Cook, stirring, until heated through, about 5 minutes more. Pour into 4 serving bowls and sprinkle each with 3/4 teaspoon of pecans. I like to serve this with a grilled swiss on rye on a chilly fall sunday afetrnoon!

Chicken Spinach Pasta
Ingredients:
Chicken Breast
Whole Wheat Penne (or pasta of your choice)
One box of frozen chopped spinach
One box of frozen chopped broccoli
Soy Sauce (to taste/optional)
Garlic Powder (or fresh, minced) - to taste
Olivio (or other heart healthy butter substitute)
Steps:
1. Boil water/cook pasta
2. Grill chicken breast, season with garlic
3. Boil spinach/broccoli in small amount of water with garlic and small dash of soy sauce
4. Cube chicken and drain pasta
5. Mix together butter substitute, small amount of soy sauce and garlic powder in a sauce pot
6. Add drained spinach/broccoli, mix with Chicken and Pasta
7. Add any additional flavors (soy sauce, garlic, butter substitute) to taste
8. Can be served hot or chilled.
*Exact amounts aren't listed as recipe can be altered to serve anywhere from 2 to 6 people and beyond.

Chicken Corn Harvest Soup

1 -2 lbs chicken breast
1 medium onion, minced (or 1/2 tsp onion powder)
1/4 cup chopped parsley
1 cup diced celery
2 cups sweet corn
salt/pepper to taste
dash of cinnamon
1 tsp honey
Pinch of thyme
1/2 tsp garlic powder
2 boxes chicken stock/broth (store bought)
*sub carrots for corn to make traditional chicken soup
Steps:
1. Boil cubed chicken breast until done (approx. 20 minutes) then dice chicken and set aside.
2. Boil all ingredients in large soup pot and add chicken. Allow to simmer for at least 30 minutes, to reduce broth slightly and allow flavors to shape
3. Add any type of cooked pasta if so desired. Additional cooked beans of any type and other veggies can be added for bulk.
4. As with all soups, this is made to taste, so make sure to check for desired flavor throughout simmering/cooking process.

This next recipe I exchanged with a friend from the Philippines in my travels, it is a traditional, simple bread served in my friend's bakery in the Philippines. :o)
Banana Raisin Bread
From Philippines
Ingredients:
2 1/2 cups flour (white or wheat)
1 cup sugar
1/2 cup vegetable oil
1/2 warm water
1 egg
3 tsp Baking Powder
2 or 3 bananas
1/2 cup raisins
Steps:
1. Blend oil, egg, water and bananas - mash banana well.
2. Add flour, sugar, and baking powder.
3. Add raisins.
4. Pour into loaf pans (sprayed with non-stick spray)
5. Bake 30 - 45 minutes (approx) in a 350degree oven until golden brown and done.

Lentil Soup:1 1lb bag of lentils (I use goya)
1 onion chopped
1 clove of garlic
1 celery stalk- chopped
1 carrot- chopped 2 cans of chicken stock
1 8oz can of delmonte (or any) sauce
Clean & Rinse lentils (they sometimes have rocks in them)
sautee all vegetables in oil
once sauteed drain oil
Add lentils, 2 cans of chicekn stock and 1 can of sauce
Bring to a boil; simmer 1 hour
Add salt & pepper to taste

I just made the most awesome dinner...I have to share the recipes!Slow Cooker Pulled Pork
Ingredients:
Approx. 3 1/2 lb pork shoulder
1 Bottle of BBQ Sauce
Apple cider vinegar
Honey
Brown Mustard
Sugar
Salt
Pepper
Paprika
Directions:
Season pork shoulder fat side up with salt, pepper, and a generous coat of paprika. Place in slow cooker.
In a separate bowl, mix together majority of the bbq sauce (reserve some for sandwiches), a splash of apple cider vinegar to dilute, a squeeze of mustard, 2 squeezes honey, and approx. 1 teaspoon of sugar. Once blended, pour over pork. Cook on low for 9 hours. When done, let sit for 15 minutes, or until cool enough to touch. Pull pork from the bone. Serve on hot dog buns.
Buffalo Chicken Mac and Cheese
Ingredients:
3 chicken breasts
1 lb elbow macaroni
1 12 oz. bottle buffalo sauce
2 cups shredded cheddar cheese
Grated parmesan cheese
2 1/4 cups milk
1/4 flour
1 clove garlic
wedge of onion
Breadcrumbs
Directions:
Place chicken breasts in slow cooker. Take approx 4 oz. of buffalo sauce and dilute with water. Pour mixture over chicken, and cook on high for 4 hours. When done, let sit for 15 minutes, or until cool enough to touch. Shred chicken, and plate until needed.
Cook pasta. While cooking, chop onion and garlic in food processor until almost liquefied. Reserve.
In a separate bowl, whisk together milk and flour. Transfer to a saucepan, and bring to a boil, all the while stirring constantly. Once at a boil, reduce heat to medium. Stir in chicken, cheddar cheese, Parmesan cheese to taste, onion and garlic. Stir until cheese is fully melted.
When pasta is done, pour in to lasagna pan. Pour cheese mixture on top, and stir together to evenly coat. Sprinkle breadcrumbs on top. Bake in preheated oven at 350 for a half hour, or until breadcrumbs are golden brown.

Yummy MeatloafServes 4 or 5 people
Preheat oven 350
Ingredients:
1lb chop meat
small can tomato sauce
onion powder
salt
pepper
1 egg
bread crumbs (i use the italian seasoned ones)
american cheese
Mix meat, half the can of tomato sauce, onion powder, salt, pepper (all to taste), a couple of handfulls of bread crumbs ( I usually wet them a little because the meat gets hard if I dont) and egg
Form a loaf
make holes in the loaf and put american cheese in them. Close them up.
Pour the rest of the can of tomoto sauce over the loaf.
bake for about a half hour-45 min.....I usually cut into it to see if its done.

Chicken StewFor slow cooker
3 medium potaotes, cut into small cubes
2 cups cut carrots
1 large onion, cut up
1 pk of fresh mushrooms, cut into halves
@ 2 1/2 lbs boneless chicken breast
1/2 tsp salt
1/4 tsp garlic powder
1 Tbsp tomato paste
2 jars (10.5 oz) chicken gravy
1/2 cup water
Put potaotes, carrots, mushrooms and onionsinto 5 qt slow cooker. Add chicken on to the top. Then sprinkle salt, garlic powder over chicken. Stir tomato paste, gravy and water together. then pour over everything.
Cook on low heat for 8-10 hours.
Just made this tonight and it was GREAT!!!

Mexican Beef ChiliSlow cooker
2 lbs boneless beef chuck, cut into 1 inch cubes
2 tbsp chili powder
1/2 tsp salt
1 tsp cumin
2 large onions, chopped
1/2 tsp garlic powder
1 can red kidney beans, drained
2 cans diced tomatoes with basil, garlic and oregano, undrained...... I only use one
1 Tbsp baking cocoa
alittle sprinkle of cinnimon
Mix all ingredents into a 3 1/2, 4 or 5 qt slow cooker.
Cook for 8-10 on slow.
If you want add sourcream and cheese.

Texas BBQ ChiliSlow Cooker
1 lb lean ground beef
1 lb beef stew meat, cut in to bite size
2 cans kidney beans, rinsed and drained
1 bottle BBQ sauce
1 can diced tomatoes
1 large onion, chopped
1 large green pepper, chopped
1 can mild green chile peppers
1 packet chili seasoning mix
Cook ground beef in skillet til brown, drain fat
Add all ingredents into a 5 qt slow cooker, mix well.
Cook low for 6-8 hrs.
Serve with sour cream and cheese

Best Cheesecake ever24 oreo cookies, finely crushed@ 2 1/4 cups
3 Tbsp butter, melted
5 pk ( 8oz) cream cheese, softened
1 cup sugar
3 Tbsp flour
1 Tbsp vanilla
1 cup sour cream
4 eggs
1 can cherry pie filling
preheat oven to 325
Line 13x9 inch pan with foil, extand over the edges. Mix crumbs and butter together, press onto bottom of pan.
Beat cream cheese, sugar, flour and vanilla. Add sour cream, mix well. Add eggs, 1 at a time, mix on low, blend well. Pour over crust.
Bake 40-50 minutes or til center is almost set. Refrigerate 4 hours. Use foil to lift out of pan then top with cherries.

Chocolate pudding piemakes 2, no cook
2 already made pie crust, graham or chocolate
1 pk cream cheese
1/4 cup sugar
2 Tbsp milk
1 container of cool whip, thawed
2 pk jello chocolate flavor, instant pudding mix
3 1/2 cups milk
Beat cream cheese, sugar, 2 Tbsp milk til smooth. Fold in 1/2 cool whip and spread over crust.
Using 3 1/2 cups milk prepare pudding as directed on the box. Pour over cream cheese layer and chill for sereral hours.
Spread remaining topping over pudding.
Thsi is always a hit
