I'm adding today's breakfast and dinner...and some of my old standbys, and then I think I'm good!Homemade Pancakes
Ingredients:
1 1/2 cups flour
3 1/2 tablespoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/2 cups milk
1 teaspoon vanilla
1 egg
4 tablespoons butter, melted
Directions:
Mix together dry ingredients in mixing bowl. Make a well in the center of the bowl, and pour in wet ingredients. Mix until smooth.
Heat a lightly oiled pan or griddle, and ladle batter. Yields about 10 pancakes.
Ultimate Chili
Ingredients:
2 lbs ground sirloin
3 slices crispy bacon
1/2 white onion, chopped
3 large cloves garlic, chopped
2 cans crushed tomatos
1/2 can water
1 can Pinto beans
1 can Kidney beans
1 can Diced Tomatos with Green Chile
2 packets McCormick Low Sodium Chili Seasoning
Chili Powder
Paprika
Cumin
Black Pepper
Directions:
Brown meat with onion and garlic. Drain fat. In large stock pot or pasta pot (recipe yields a LOT of chili!), combine crushed tomatoes, water, diced tomatos, beans, and all meat. Place on medium heat to start. Add chili seasoning, and chili powder, paprika, cumin, and pepper to taste. Simmer between medium and low, stirring on occasion for about 2 hours. Season throughout the process to taste. Serve with sour cream and cheddar, by itself or over egg noodles.
Chicken Marsala
Ingredients:
1 package thin-sliced chicken breast
3 tablespoons olive oil
1/4 onion, diced
3 cloves garlic, chopped
2 packages of slice white mushroom
3 tablespoons flour
1/2 cup Marsala wine (1 cup if no stock)
1 1/2 cups beef stock (optional)
Salt and pepper, to taste
Directions:
Dredge chicken breasts in flour seasoned with salt and pepper. Fry cutlets in pan with olive oil. When done, remove from pan and lay on plate with paper towel to catch the excess oil. In same pan, add oil, onions, garlic, and mushrooms, and sautee until mushrooms are tender. Add flour and cook for a minute, then deglaze with marsala wine. If using beef stock for a thinner sauce, add at end and cook until sauce is blended. If beef stock is not used, sauce will be more of a gravy. Add chicken back to the pan and cook until coated with sauce. Serve over pasta.
Chicken with Honey Balsamic Glaze
Ingredients:
1 package Chicken Breasts
1/4 onion
Honey
Balsamic Vinegar
Directions:
Carmelize onions in pan. Add chicken and cook thoroughly. Pour balsamic vinegar in, enough to coat pan. Add a few squeezes of honey, and mix thoroughly in to vinegar to thicken. Cook until chicken is evenly coated. Serve with side of couscous.

Random Helpful Kitchen Hints:Fresh lemon juice will remove onion scent from hands.
When cooking vegetables that grow above the ground, the rule of thumb is to boil them without a cover.
A lump of sugar added to water when cooking greens helps vegetables retain their fresh color.
Vinegar can remove spots caused by tomatoes. Soak the spot with vinegar and wash as usual.
Egg slicers can be used to make any slicing perfect and even, including mushrooms, strawberries, kiwis, or bananas.
When baking bread, a small dish of water in the oven will help keep the crust from getting too hard or brown.
When baking in a glass pan, reduce the oven temperature by 25 degrees.
The freshness of eggs can be tested by placing them in a large bowl of cold water; if they float, do not use them.

I have a recipe I made for breakfast today!!!It was YUMMMM!!!!!!
VEGGIE MEDLEY FRITTATA
1/2 package of bacon or turkey bacon
1 cup broccoli florets
2 finely chopped onions
1 cup chopped red or green pepper
1 tablespoon butter or margarine
4 eggs lightly beaten or 1 cup refrigerated egg substitute
1/4 cup water
1/2 teaspoon oregano
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 cup shredded cheddar cheese
1/2 cup shredded parmesan cheese
Directions:
1 Prepare bacon per package directions. Rip into bite size pieces.
2. In a large skillet, saute broccoli, onions, and peppers in butter until tender. Remove from heat, set aside.
3. In a mixing bowl, beat together eggs, water, oregano, pepper ad garlic powder until foamy.
4. Stir in bacon, cheese, and broccoli mixture. Pour into a greased shallow 1 1/2 quart baking dish. Bake at 350 degrees about 25 minutes or until a knife inserted in the center comes out clean.
Servings: 4-6

2. Combine the flour, baking powder, and salt (I sifted them together)
3. In a large bowl, cream the vegetable shortening and both sugars. Beat in the egg and vanilla extract. Beat in the bananas. Gradually blend in the dry ingredients. Fold in the chocolate chips.
4. Spread the mixture evenly in the prepared pan.
5. Bake for 25-30 minutes, until golden brown on top. Cool in the pan on a rack before cutting into large or small bars.

Polish Pierogies - usually we serve this as a side to a main dish. Or you can have it by itself.Ingredients:
3 cups of flour
2 eggs
1/2 teaspoon of salt
1 Cup of water
Pepper
Margarine
Large Can of Sauerkraut
1/2 large onion or 1 small onion
First, cook the sauerkraut:
1. Open the can of sauerkraut and empty it into a calendar to drain the liquid.
2. Wash the sauerkraut with cold water to get the sourness out, for about a minute.
3. Slice the onion and put that into a frying pan with the margarine.
4. Add sauerkraut to the pan with the onions and margarine.
5. Continue turning the sauerkraut in the pan, adding margarine as needed so it doesn't burn.
6. You can add pepper to the mixture, if desired.
7. Once the sauerkraut is nice and brown it is done.
8. Put this on the side to cool.
To make the dough:
1. Take 3 cups of flour, 2 eggs, half a teaspoon of salt and one cup of water and mix dough until it rolls into a ball.
2. If it's too wet, add more flour.
3. If it's too dry, add some water.
4. Roll out the dough
5. Take a large glass or cup to cut the dough (like you would with a cookie cutter) into round pieces.
Prior to adding the sauerkraut to the dough and making the actual pierogie, take a large pot of water and bring it to a boil.
Now, while the water is boiling, you will make the pierogies:
1. Take a teaspoon or tablespoon of the cooked sauerkraut mixture, and place it in the center of the dough and pinch the dough together. If the dough won't stick, stick your fingers in water and this should help.
2. Place the pierogie carefully into the pot of boiling water. I usually place it on a large serving spoon and gently place it into the pot.
3. When the pierogie floats to the top, it is done. Take it out of the pot and place it on a plate to cool off.
4. You can put multiple pieorgies into the water at the same time.
When you are ready to serve the pierogies, you brown them lightly in a frying pan with margarine.
Note: You can also substitute the sauerkraut mixture and use mashed potatoes, or even prune butter.

I know it's a day past the deadline, I'm sorry I didn't get this on here sooner.Chicken Francaise
Fry or bake chicken cutlets as you normally would.
Sauce:
Per 1 lb of chicken
Melt 2 tbl butter in a sauce pan
Add 2 tbl of flour and stir (take off the heat while stirring)
Add 1 cup of water and return to heat
Add 1 chicken boulion cube
Add salt, pepper and parsley flakes (as desired)
Add the juice of one lemon (or 3 tbl spoons lemon juice)
Stir until the boulion cube is melted and sauce is thickened.
Place chicken in a pyrex type dish and pour the sauce over the chicken.
Bake at 350 for 20 minutes
