Cranberry Bread2 cups sifted flour
1 cup sugar
1 1/2 tsp baking powder
1 tsp salt
1 1/2 tsp baking soda
1/4 cup butter or margarine
1 egg (beaten)
1 tsp grated orange peel
3/4 cup orange juice
1 1/2 cup golden raisins
1 1/2 cup fresh cranberries (chopped)
1/2 cup nuts (chopped)
Sift together flour, salt, baking powder, & baking soda into a large bowl. Cut in butter until mixture is crumbly. Add egg, orange peel & orange juice all at once, stir until mixture is evenly moist. Fold in raisins & cranberries - spoon into a greased loaf baking dish. Bake @ 350 degrees for 1 hour & 10 min.

Bean Dip(Use glass pie plate)
1 pkg cream cheese - spread on bottom of dish
add 1 can vegitarian chili
add 1 jar med. salsa
top w/ grated sharp cheddar cheese
cover w/plastic wrap
microwave for 7 min, serve w/ tostillas

Blue Cheese & Pear Salad8 oz Champagne Vinaigrette
10 oz cut romaine lettuce
10 oz mesculin lettuce
2 ripe pears, dice 3/4'
6 oz candied walnuts
8 oz crumbled blue cheese
Salt & Pepper (to taste)
1 red bell pepper, julienned
In a mixing bowl place the vinaigrette, the lettuces, diced pear & candied walnuts & 1/2 the blue cheese
Season w/ salt & vinegar & toss until coated
Arrange in chilled salad bowl & place some colorful ingredients on top
Sprinkle w/ remaining cheese & garnish lightly w/ Julienned red peppers around center of salad - place extra walnuts onto top of salad.

Chili Soup1 lb ground chuck or chicken or turkey
2- 1lb cans whole tomatoes (chopped w/juice)
2- 1 lb cans red kidney beans w/ juice
2 tbsp chili powder
1 tbsp cumin
1 small onion - diced
1 garlic clove
salt & pepper to taste
Brown meat in 6 qt pot - add onion, garlic & spices & brown. Add tomatoes & beans & a few pinches of clove (1/8- 1/4tsp). Simmer 20-30 min. Can add a chili pepper for extra zip!

)Russian Vinaigrette (this is a meal - not a dressing)
6 med boiled potatoes, diced
1 1lb can sliced beets, drain & slice (save some juice for color)
1 small can (8oz) peas, drained
1 cup diced ham
1 cup diced ham
1 cup mined green onion (scallions)
6 hard bolied eggs, chopped
1 cup (small can) sauerkraut - chopped fine
2 tbsp prepared mustard
2 large dill pickles, diced
1 tbsp sugar
juice of one lemon
salt, pepper to taste
2 cups (more or less) mayo
small amount of pickle juice
combine all ingredients in a large bowl. enjoy!

Mini Quiche1/2 cup butter, softened
1/2 cup solid white vegetable shortening
1/3 cup boiling water
1 tbsp vinegar
2 1/2 cups all-purpose flour
1 tsp salt
1 cup grated Swiss cheese
6 slices bacon, cooked, drained and crumbled
1 cup heavy cream
2 eggs
1. In mixer bowl, beat together butter and shortening until smooth and creamy. Add boiling water and vinegar and continue to beat until well blended.
2. Combine flour and salt and stir into shortening. Gather into a ball. Break off pieces the size of a walnut and press into bottom and sides of tart pans.
3. Sprinkle grated Swiss cheese and bacon evenly onto unbaked pastry shells. Combine eggs and cream with a whisk and spoon about two teaspoons of the mixture into each tart.
4. Bake in a 375 oven for about 35 mins or until crust is done and quiche is lightly browned on top.
Makes 36 mini-quiches.

Caramelized OnionsI'd put this under sides or Vegetarian stuff...I guess it depends on what you want to do. I just figured it'd be helpful because I never knew how to make these until recently and now I do it all the time!
1 Large Onion
3 TBS olive oil
3 TBS vinegar
3 TBS sugar
Slice Onion into long relatively thin (but not too thin) strips. Put all ingredients in a pot. More sugar, olive oil, and/or vinegar may be needed depending on how big or how many onions you cook. Cook on high for 5 minutes (just until the onions start to look opaque like they're a little cooked) then look on low until they're looking brown and thin. Stir often.
*Tip- Turn the stove on the lowest setting and just forget about them. They take like 45 minutes to cook,.

This is AMAZING!!!Dh LOVES wings and I am not a fan...HE could eat them all the time...
I found this Weight Watcher recipe and it is Fantastic!!! DH loved it!!! I loved it too! And I usually don't lke spicy!!

Buffalo Chicken Bites
5 Points Per Serving
This is an easy to make dish - perfect for a buffet - has all the flavor of Buffalo Chicken wings without all the added calories and fat. For extra heat add more hot pepper sauce and a pinch or two of cayenne.
1/4 cup of Louisana-style hot sauce
1 teaspoon hot pepper sauce (tabasco)
1 teaspoon Worcestershire Sauce
2 Tablespoons butter
1 pound skinless boneless chicken breasts , cut into 1-inch chunks
2 carrots, cut into sticks
3 celery stalks , cut into sticks
1/2 cup fat free blue cheese dressing
Combine the hot sauce, pepper sauce, and Worcestershire sauce in a small saucepan over medium heat; bring to a boil and cook 1 minute. Remove from the heat and add 5 teaspoons of the butter stirring until melted.
Melt the remaining 1 teaspoon of the butter in a large nonstick skillet over meduim-high heat. Add the chicken and cook, stirring frequently, until well browned 8-10 minutes. Add the pepper sauce mixture and cook for about 1 minute longer, tossing the chicken to coat. Serve with the celery, carrots and blue cheese dressing.

i finally remembered to do this lol...stuffed tomatoes
ingredients
1.beefsteak tomato
2.mozz cheese
3.parm cheese
4.salt
5.pepper
6.garlic
7.italian bread crumbs
get one tomato per person...use a beefsteeak one
carefully cut off the top of the tomato and scoop out the inside..be careful not to poke a hole n the tomato
throw out the top but keep the insides..put them n a bowl
add some mozz cheese,parmesan cheese,salt, pepper and garic
add italian seasond bread crumbs and mix around tll its all blended
scoop into each tomato till ts filled up..then sprinkle some more mozz cheese on top
place in a greased pan and bake on 350 for 20 min or until the cheese is melted

Balsamic Basil ChickenCook Time: 20 minutes
Ingredients:
1 1/4 pounds boneless, skinless chicken breasts, cut into 4 pieces
8 ounces cherry tomatoes
1/2 cup fat-free, low-sodium chicken broth
1/4 cup balsamic vinegar
2 tbsp freshly chopped basil (or 2 tsp dried herbs)
Preparation:
Preheat oven to 425 degrees.
Coat a large baking dish with nonstick cooking spray. Place chicken pieces and tomatoes in baking dish. Pour chicken broth and balsamic vinegar over chicken. Sprinkle basil over the top.
Bake uncovered for 20-25 minutes, until juices run clear and the internal temperature reaches 165 degrees.

I made this recently and if you dont like sauasge you can swap it out for whatever meat or poutly you like and it should still taste great!!!Italian Sausage Soup with Tortellini
1 pound sweet Italian sausage, casings removed or any other meat
1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
1/2 cup water
1/2 cup red wine
1 can of diced tomatoes
1 cup thinly sliced carrots
1/2 tablespoon packed fresh basil leaves or dry basil
1/2 teaspoon dried oregano
1 (8 ounce) can tomato sauce
1 1/2 cups sliced zucchini
8 ounces fresh tortellini pasta
3 tablespoons chopped fresh parsley or dry parsely
Brown the sausage. Remove, drain and reserving 1 tablespoon of the drippings.
Saute onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.
Skim fat from the soup. Stir in zucchini and parsley. Simmer covered for 30 minutes. Add tortellini during the last 10 minutes. Sprinkle with Parmesan cheese.
You don't have to use beef broth. You can use chicken broth or even water. Also if you dont like the veggies you can swap them for any other type like frozen corn or green beans.

Chicken Noodle Soup2 quarts chicken broth
1 quart water
1 roast chicken (can be store-bought or just oven roast chicken
3 tablespoons vegetable oil
2 large onions, diced
2 large carrots, peeled and cut into rounds or half rounds, depending on size
2 large stalks celery, sliced
1 teaspoon dried thyme leaves
3 cups egg noodles
1 cup frozen green peas
1/2 cup chopped fresh parsley
Salt and freshly ground black pepper
Bring broth and water to a simmer over medium-high heat in a large soup kettle. Meanwhile, separate chicken meat from skin and bones; reserve meat. Add skin and bones to the simmering broth. Reduce heat to low, partially cover and simmer until bones release their flavor, 20 to 30 minutes.
Strain broth through a colander into a large container; reserve broth and discard skin and bones. Return medium-high heat.
Saute onions, carrots and celery in oil until soft. Add chicken, broth and thyme. Bring to a simmer.Add egg noodles, then simmer until tender. Before removing from heat, stir in: green peas,fresh parsley and salt & pepper, to taste.

Buffalo Chicken DipTake a rotisserie chicken and pull off every bit of meat you can -- cut it all up into small pieces.
2 blocks of cream cheese
1 cup chunky blue cheese dressing
1 cup Frank's hot sauce
Shredded cheddar cheese
Put the cream cheese in a frying pan to melt - keep stirring.
Add chicken until mixed thoroughly
Add dressing and hot sauce
Place the mixture into a small casserole or baking dish -- top with the shredded cheddar. Let melt. Ready to serve. If the cheese does not melt right away you can always throw it in the oven so it melts to your liking.
