Heres my linzer tart recipe that everyone loves
LINZER TARTS
Ingredients
1 1/4 cups unsalted butter, softened
2/3 cup white sugar
2 cups sifted all-purpose flour
1 3/4 cups ground almonds
1/8 teaspoon ground cinnamon
5 tablespoons raspberry seedless jam
1/3 cup confectioners' sugar for decoration
Directions
Cream the butter and sugar together until the mixture is light and fluffy. Beat in the flour, 1/2 cup at a time, the almonds and cinnamon, and continue beating until the mixture becomes a slightly stiff dough.
Shape the dough into a ball, wrap it in wax paper or plastic wrap and refrigerate it for about one hour.
Preheat oven to 325 degrees F (165 degrees C).
On a lightly floured surface, roll the 1/2 of the dough into a sheet 1/8 inch thick. With a 2 1/2 inch cookie cutter, cut as many circles from the sheet as you can. Knead the leftover scraps of dough into a ball and roll it out again into a 1/8 inch sheet. Cut out more circles. You should now have about 12 circles.
Arrange them on an ungreased baking sheet leaving about and inch of space between them.
Repeat the rolling and cutting process with the other half of the dough, but before placing the second batch on the baking sheet, cut out the center of each circle with a 1/2 inch cookie cutter. Bake both batches for 10 - 15 minutes or until light brown. Cool on cake rake for 20 minutes.
Spread tops of the solid circles with a thin coating of jam, lay a cutout cookie on top of each, pressing the two together so they make a sandwich. Spoon a dab of jam into the opening of each tart and sprinkle the tops with confectioners' sugar before serving.
NOTE: Keep dough as cold as possible for easier handling. You may have to chill it after rolling it out so that it will be easier to cut. Also you can use any cookie cutter you want it doesnt have to be a circle. Sometimes I make them in the shape of christmas trees

In a large bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and 4 teaspoons salt. Stir in chicken, cover, and refrigerate for 1 hour.
Preheat a grill for high heat.
Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.
Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute. Season with 2 teaspoons cumin, paprika, and 3 teaspoons salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.

Simple, delicious flourless peanut butter cookies (with optional chocolate chips -- I use vegan ones to keep this dairy free).Ingredients:
2 c. peanut butter
2 c. sugar (brown, white, or any combo)
2 eggs
2 tsps baking soda
pinch salt
1 tsp vanilla extract
chocolate chips (to taste)
(recipe can easily be halved!)
Prehead oven to 350. Stir peanut butter and sugar until smooth. Beat in eggs one at a time (by hand is fine). Stir in baking soda, salt, and vanilla. Roll into 1' balls. Place on parchment-covered baking sheet. Press chips into balls if desired. Otherwise, press a fork into the tops of each cookie in a criss-cross shape. Bake 8 minutes at 350 degrees. Cool 5 minutes on baking sheet before removing to cooling rack.

Does flourless mean they are gluten free? My friend is looking for gluten free recipes for Christmas (her sister found out she has the allergy) and I want to share your recipes with her if they are.

We could use some vegetarian dishes and some pasta dishes. Or some fish dishes that does not include pasta. Appetizers are surprisingly low for such a popular category.Also we only have two alcoholic drinks, one of which I am adding now.

Candy Cane MartiniI've had this recipe on my computer for years, probably came from the internet, but I tried these tonight for the first time in honor of my puppy's name (Candy Cane). They were so yummy.
1 1/2 ounces vanilla vodka
1/2 ounce peppermint schnapps
1 oz. Club soda
crushed candy canes for garnish
Rimmed with crushed candy canes.

An appetizer that is always a HUGE hit at all of our parties.Zucchini & Cheese Crostini
2 zucchini grated
1 2/3 cups of Gruyere Cheese
1 small egg
a dash of worcestershire sauce (or any really high quality smokey meat sauce, plain old BBQ won't do, needs to be really thick and smokey)
a loaf of bread
Cook in a preheated broiler (or just turn the oven on really high and cook on the top shelf)
Put the grated zucchini in a clear dry kitchen towel and twist tightly, squeezing out all the excess juices. Put in with the rest of the ingredients. Slice up bread and spread on top. Then put on a cookie sheet until the tops get brown (watch very closely it will be different for every oven, mine is usually 5-10 minutes depending on how high I turn it).

Butterscotch & Chocolate MartiniThis is good for two people, be careful, it's deadly!
-2 shots butterscotch liquor
-1 shot Godiva Chocolate liquor
-2 shots vodka (or vanilla vodka)
-2 ice cubes
-As much chocolate syrup as you want
-Fill up the rest of your drink mixer with milk.
Shake and serve!

Best Macaroni and Cheese (for Grown-Ups)Can be optional vegetarian dish if you don't put the bacon in.
* 1 pound cavatappi or elbow macaroni
* 1 quart milk
* 8 tablespoons (1 stick) unsalted butter, divided
* 1/2 cup all-purpose flour
* 12 ounces Gruyere cheese, grated (4 cups) (I usually only do 2 1/2 cups)
* 8 ounces Smoked Gouda, grated (2 cups) (I usually grate the whole block of Smoked Gouda, sometimes it's a little bit more or a little bit less)
* 1/2 teaspoon nutmeg
* 1 1/2 cups fresh white or potato bread crumbs (4 slices) (this tastes horrible if it's any other bread)
* Optional - 5 slices of bacon cut up in tiny pieces
Directions
Preheat the oven to 375 degrees F.
Cook pasta according to the directions on the package. Drain well.
Meanwhile, heat the milk in a small saucepan, but don't boil it. In a large pot, melt 6 tablespoons of butter and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. Still whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Add the Gruyere, Gouda, and nutmeg. Add the cooked macaroni and bacon and sauce into a big caserole dish and stir well.
Melt the remaining 2 tablespoons of butter (you may need another one, but 4 is usually too much), combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

DessertCinnamon Rolls
Ingredients
2 tbsp dark brown sugar
1 tsp cinnamon
1 tsp butter (melted)
1 - 22 ounce Breadstick (the soft unbaked ones like Pillsbury)
1/4 cup confection sugar
1 1/2 teaspoons reduced fat cream cheese
1/4 tsp vanilla extract
375 degrees 9x13 pan
Combine/Mix Brown sugar, Cinnamon, and butter in a bowl
seperate breaksticks and sprinkle brown sugar mix, then roll each one into a spiral (what a cinnamon roll would look like)
bake 15-18 minutes
To make Glaze - mix confection sugar, vanilla, cream cheese and add a few drops of water. Mix and drizzle over the top of each cinnamon muffin!!

Spanish Pepper Steak2 lbs Steak Strips
1/2 tbsp salt
Pepper to taste
1/3 cup white vinegar
1 cup olive oil
3 garlic cloves
1 cup green peppers
2 spanish onions
Seasoning - salt, pepper, vinegar 3/4 cup olive oil, garlic - set aside
1/4 cup oil, sautee peppers and onions, set aside
Heat oil and cook meat
When done, add peppers, onions, vinegar...mix and cook 20 minutes

1 can 16 ounce crushed pineapple - drain and reserve liquid
4 cups mini marshmallows
1/2 cup sugar
1 egg
1 tbsp flour
1 1/2 tsp vinegar
1 (8oz) cool whip
2-3 cup diced apples
Mix pineapple chunks and marshmallows, set aside and refrigerate overnight
Next Day
In a sauce pan - egg, pineapple juice, vinegar, sugar, and flour - cook until slightly thickened. Set aside to cool
When it cools off combine with marshmallow mis then mix in apples. Layer cool whip on top.
THIS IS YUMMY!!! Great for a summer bbq!!

Spanish Rice (Rice with Corn)3 1/2 cups water
Adobo
Garlic Powder
1 can Tomato Paste
Place water, adobo, garlic powder (enough to cover the top layer of water with adobo and garlic powder) and tomato paste in a pot, bring to boil. Boil until tomatoe paste is desolved
Add 1 1/2 cups of rice and bring to a boil
Simmer on low for 20 minutes - covered - do not stir
Add 1 can drained corn and cook for 5 minutes

Grilled Terriyaki Chicken1/2 cup low sodium soy sauce
1/4 cup dry white wine
2 tbsp honey
1/2 tsp ginger
2 garlic cloves
6 - 6 oz chicken breast
vegetable cooking spray
Combine soy sauce, wine, honey, ginger and garlic in a bag. Seal bag, add chicken, marinate 8 hours
Remove Chicken from marinade, put marinade in small saucepan and bring to boil.
Coat pan (or grill rack) with cooking spray and cook chicken.
Use extra marinade for chicken and you can even combine marinade and chicken with rice.

Rice Crispy Chicken2 Cups Rice Crispies
1/2 Cup Parmesan Grated Cheese
1 envelope ranch salad dressing mix (powder)
2 Beaten egg whites
8 skinless boneless chicken breasts
Preheat oven to 350
Spray baking pan with cooking spray
In a bowl, combine rice crispies, parm cheese, and ranch dressing
Place beaten egg whites into a medium bowl. Dip each chicken in to egg then in the cereal mixture. Coat evenly on both sides.
Arrange the coated chicken on the prepared baking pan. bake until golden brown and juices run clear when pierced with a knife. About 20-25 Minutes.

She just has to make sure the peanut butter is GF (it almost always is) and if so, then yes, this is a totally GF recipe.
