QOTWeekend! Inspired by the gtg food post which had me salivating, everyone post a great recipe or two!
Amyandeddie--marrying a restauranteur- I expect great things from you. ;) Plus all you GTG girls who are bringing amazing dishes .., share it with everyone!Please feel free to throw in an ethnic specialty, more than one, a side dish, or a four course meal. I know I am always looking for new things to make:
Here is something I am making tonight from the Recipe board a few weeks ago:
1 jar of traditional marina sauce
1 16 oz can of cranberry sauce ( jelly kind)
2 lbs. of chop meat... I also mixed this with ground turkey
1 egg , beaten
seasoned bread crumbs
Take sauce and cranberry sauce and melt together in a saucepan, bring to a slow boil, and bring it down to medium, let simmer. take meat, and egg, and breadcrumbs , combine to make meatballs, put in sauce, cover and cook for about 45 minutes or until meatballs are done. serve with rice.

Hooray Deb! Something up my alley!Tonight we made the most kick *** Salmon Burgers. I don't believe in measurements for anything - you just add things until it works.
Flaked Salmon
Breadcrumbs
Beaten Eggs
Chopped Garlic
Chopped Onion
lil mayo
lil mustard
lil salt
lil pepper
lil lemon juice
Make patties - fry em in a pan with a little oil- so yummy! Serve with tartar sauce. Like crabcakes, only tastier! We are eating with steamed corn and tomato salad - a low carb meal can feel indulgent!
I have a whole crapload more...but that will suffice for the moment.
I'm going to make sandwiches out of the leftovers tomorrow. mmmmmm...

this is yummy. my mom makes this cake:ZUCCHINI BREAD
3 EGGS
2 CUPS SUGAR
1 CUP OIL
2 CUPS GRATED RAW ZUCCHINI
3 TSP VANILLA EXTRACT
3 CUPS FLOUR
1 TSP SALT
1 TSP BAKING POWDER
3 TSP CINNAMON
1 CUP CHOPPED NUTS
¼ TSP BAKING SODA
MIX FIRST 5 INGREDIENTS TOGETHER, THEN ADD THE REST. MIX WELL. AKE IN 2 GREASED BREAD LOAF PANS FOR 1 HOUR IN 350 DEGREE OVEN
these potatoes are yummy
SWEET POTATOES
5 LARGE SWEET POTATOES
1 STICK MARGERINE
1-2 TSP VANILLA EXTRACT
1 CUP SUGAR
1 CUP WATER
NUTMEG
SLICE POTATOES WITH OR WITHOUT SKIN. ADD IN ALL INGREDIENTS. SPRINKLE NUTMEG ON TOP OF POTATOES. SIMMER UNTIL POTATOES ARE SOFT (½ HOUR OR SO).

Im actually starting this one tomorrow. I dont know if any of oyu have ever had those rainbow jelly bars from the bakery. But FH LOVES them and asked me to bake them. I found the recipe a little a while ago and will make my first attempt tomorrow. Wish me luck! Here's the recipe:RAINBOW COOKIES
Yield: About 8 dozen
1 can (8 oz) almond paste
1 cup butter, softened
1 cup sugar
4 eggs, separated
2 cups flour
6-8 drops red food coloring
6-8 drops green food coloring
1/4 cup seedless red raspberry jam
1/4 cup apricot jam
1 cup (6 oz) chocolate chips
Grease the bottoms of three matching 13-inch x 9-inch x 2-inch
baking pans (or use 1 pan). Line the pans with waxed paper; grease
the paper.
Place almond paste in a large mixing bowl; break up with a fork.
Cream with butter, sugar and egg yolks until light, fluffy and
smooth. Stir in flour.
In another mixing bowl, beat egg whites until soft peaks form. Fold
into dough, mixing until thoroughly blended. Divide dough into
three portions (about 1-1/3 cups each). Color one portion with red
food coloring and one with green; leave the remaining portion
uncolored. Spread each portion into the prepared pans.
Bake at 350 degrees F for 10-12 minutes or until edges are light
golden brown. Invert onto wire racks; remove waxed paper. Place
another wire rack on top and turn over. Cool completely.
Place green layer on a large piece of plastic wrap. Spread evenly
with raspberry jam. Top with uncolored layer and spread with apricot
jam. Top with pink layer. Bring plastic wrap over layers. Slide
onto a cookie sheet and set a cutting board or heavy, flat pan on
top to compress layers. Refrigerate overnight.
The next day, melt chocolate in a double boiler. Spread over top
layer; allow to harden. With a sharp knife, trim edges. Cut into
1/2-in. strips across the width; then cut each strip into 4-5
pieces. Store in airtight containers

I've actually been compiling a book of vegan recipes... I'll have to dig out some of the better ones and post. Trouble is, I usually take a basic recipe and modify as I go along. Let's see what I can come up with for the thread. I'll be back...

This one is FH favorites dish in life, and the first time I made him this dairy free version he didn't know the difference. I totally believe in lying to people the first time they eat my cooking. :) As soon as you tell most people they are eating soy anything, they usually don't give it a fair shake.Any of the soy ingredients in this dish can be found in the 'health food' aisle of most major grocery stores (I find the new Super Stop and Shops to be fairly well stocked.)
Ziti With Vodka Tomato Soy 'Cream' Sauce
Makes 6 Servings
Preparation Time: 30 Minutes
*1 tablespoon sea salt, plus additional for seasoning
*One 28-ounce can whole plum tomatoes, drained and crushed
*2 tablespoons olive oil
*1 cup plain soy milk
*3 cloves garlic, finely sliced
*Freshly ground black pepper
*1/2 cup chopped onions
*12 ounces ziti (penne works too)
*5 fresh basil leaves, julienned
*Basil leaves, for garnish
*1/4 teaspoon red pepper flakes
*Soy Parmesan cheese, for serving
*6 tablespoons vodka
1. In a medium stockpot, bring to a boil 5 quarts of water with 1 teaspoon of the sea salt and 1 tablespoon of the olive oil.
2. Meanwhile, heat the remaining 1 tablespoon olive oil in a medium nonstick skillet. Add the garlic and onions and cook, stirring, until the onions are translucent, about 3 minutes. Add the basil, pepper flakes, and vodka and cook for 2 minutes more. Add the tomatoes, bring to a simmer, reduce the heat to low and simmer for 15 minutes.
3. Transfer the content of the skillet to a deep storage container and mix with an electric handheld blender (or use a food processor), adding the soy milk slowly. Season with salt and pepper to taste.
4. Add the ziti to the boiling water and cook until al dente 7 to 8 minutes. Drain and toss with the sauce. Serve in bowls with the basil leaves and Parmesan on top.

Easiest recipe in the world:Cut several breasts of chicken into bite size3 pieces and cook til white on both sides. Add to one can cream of mushroom soup and 2 cup minute rice. Put into pie crust with filo dough and season--30 minutes EASY!

Ok-- I got one!! These are UNBELIEVABLE!! And there are even good if you roll them into balls, and store them in the freezer.. and eat it raw right out of the freezer-- it's like fudge.. YUM.Better Than Sex Chocolate Cookies
2 pkg. (16 squares) semi-sweet baking chocolate, divided
3/4 cup firmly packed brown sugar
1/4 cup butter (1/2 stick)
2 eggs
1 teaspoon vanilla
1/2 cup flour
1/4 teaspoon baking powder
2 cups chopped nuts
Coarsely chop 8 squares of the chocolate- set aside.
Microwave remaining 8 squares in large bowl on high 1-2 minutes.
Halfway through, remove, stir chocolate and add butter- continue to melt all. Stir til mixture is melted and smooth. Stir in sugar, eggs and vanilla.
Stir in flour and baking powder. Stir in nuts and reserved chocolate. Chill for one hour.
Preheat oven to 350.
Drop dough by 1/4 cupfuls onto ungreased cookie sheet. Bake 12-14 minutes- til cookies are puffed and feel set to the touch. Cool 1 minute before removing to wire rack to cool.
Makes 18 cookies
