If you are using DM's house bakery, Cascon Bakery in Whitestone, I didn't go for a tasting for some reason but we got the canoli filling and the chocolate pudding filling with yellow cake. It was REALLY good. They charge extra for fondant. Tell them exactly how many tiers you want and how it looks. I made mine tall. Don't like that short, squat look.

Mine was buttercream if you see the pic I posted above. The fondant was $200 extra? Not sure. I don't like it when they try and flatten the buttercream to look like fondant which is something that place is really into. It winds up looking like wet paint/cement and not like fondant at all. Tell them NOT to do that.
They got a new girl that does great stuff with fondant though. I had her do FH's groom cake since he loves cheesecake which they specialize in and the Islanders. Round is easy for that-a puck. Check it out. Was only $80.

Nat, I don't know how you managed to get 5 tiers and the fondant at no extra cost but I have to be honest that when I saw that, I was fuming. I had the same number of guests. I did ask for a fourth tier but the fondant was a lot extra.
I kept not wanting to be a Bridezilla but now I am getting annoyed at how I should have spoken up many times! So learn your lesson girls!

I went to the DM a number of times during my wedding planning and took lots of pics. I am looking everywhere for the pic of a 3 tiered cake with that flattened buttercream made to look like fondant from Cascon Bakery. It looked terrible and pathetic as 3 tiers. That is why I asked them to make it at least 4 and more tall than squat.Damn. If I find the pic, I will upload it. Perhaps it is some other's taste but I think had I walked in and seen this, I would have been VERY upset. So, I asked specifically for that green banding, pearl drops and the pink flowers. Whew. It was a bit lop sided but I did like my cake and it really tasted good.

I don't want to poo poo anyone's taste. Just letting you know if you're getting your cake from DM, it will be from Cascon Bakery. If you're around 100 guests, they will give you 3 tiers. They also try and smooth out the buttercream to look like fondant which I personally don't like and I don't like the material ribbons around the cake. See pic and decide for yourself.

Instead, I asked for fluffy buttercream, 4 tiers made more tall than squat, green ribbon and pink flowers made of paste? I think I made some good modifications. This was my cake but I could have wound up with the one I posted above had I not spoken up.
That is a big difference. Thanks for sharing. Cake is really important to me and must stand out so I hope they can work with me.

Wow I had no idea. I'm going at 2:30 today to Cascon and definitely did not want fondant (just don't like the taste.) I'll definitely ask for 'fluffy' buttercream and not flattened, with the wet look...Thanks girls!!!

Arighty girls... so we just got back from our cake tasting then our tasting at the DM.First... the cake...
They were really great to work with. I took the advice since we didn't want fondant and told them I wanted the buttercream to look 'fluffy...' hehe. At first he looked confused, but then I told him (and showed him a picture in his book) that I didn't like when the frosting almost looks wet. So he got my drift. Mentioned that we'll havev 110-120 and did the four tiers, no questions asked. For you girls who haven't been to cascon yet. You get a choice of chocolate cake or vanilla cake. Then you get a choice of vanilla pudding filling, chococate pudding, strawberry pudding, canoli, and the rich chocolate. At first we were set on doing red velvet, but of course it was about $120 extra. We decided that between the canoli and rich chocolate we coudn't go wrong. So in the end, we decided on butter cream, vanilla cake, with alternating layers of canoli and chocolate.
DM Tasting...
So it was a little crazy in there today. Thomas had told us that there was a wedding going on tonight, but said that it would be the perfect time to come. First they treated us with some amazing wine... in total about three glasses :) We first got to try the antipasta... olives, red peppers, tomato/mozz., presciutto, salamis, etc. AMAZING.
Then we were served their penne vodka....probably going to be our choice for the wedding... very rich and a good sauce.
Then they brought out a plate of calamari... a bit overcooked, but last time we at calamari at the DM (in Jan? at their bridal show?) it was phenomenal. Still good though.
Last, they brought out three main dishes. First we tried the chicen apollo... chicken with tomato, spinach, presciutto motx? Very good... will probably be our choice for chicken.
Then was the Filet. Very good... we may ask for a different type of sauce but meat was cooked perfectly.
Lastly was the Sea Bass... the cut of fish was phenomenal. I love fish so this was a must for me. Only thing that I was a bit disappointed with was their citrus basil sauce on the fish. I didnt really like that. Talked to Thomas and said we could have it prepared whatever way we wanted and we could definitely change the sauce!
All in all it was a GREAT day. Food was amazing and I can't wait to have it again on wedding day! Thanks girls for the advice!

How did it go? BTW, I don't like the taste of fondant either. I would bring a pic of a buttercream cake with some texture but good luck finding pics. Everything these days in the mags and online is fondant. Let me see if I have any!

Oh Wow! Beautiful cake. I would have thought that it was fondant. They are decorating it like that? Very nice.BTW, I got the alternating cannoli and chocolate pudding with vanilla cake. It was really good. I still have the top tier waiting for me for our one year anniversary.

I loved the way our cake came out -- Cascon did a great job! Sorry, the picture is a little fuzzy...
OMGosh! How beautiful! Is that fondant or buttercream? Were you charged extra? I didn't think I had much of an option other than what I got. Great cake!
