Cool As A Cucumber: Sensational Summer Menus

Nothing says summer like FRESH fruits and veg…and when it comes to refreshing summer selections, the Mediterranean diet helps you serve up some delicious dishes that are also good for you.
1. Fruit For Thought: Think about adding fresh fruit to your cocktail hour. Think plenty of fresh berries, figs (along with nuts and cheese), apples, oranges, pears, etc.
2. Dipping Accoutrements: Forget the salsa and chips. Treat guests to gourmet breads and olive oils for healthier dipping options.
3. Use Your Bean: Serve up some savory bean dips like hummus and an assortment of refreshing bean salads.
4. Ingrain Some Grains In Your Menu: Think fresh baked spelt, whole wheat or other grainy breads. Consider pasta made from quinoa or whole wheat and offer attendees other essential grains such as barley and couscous in lieu of rice, etc.
5. Meat Guests Demands. However….it’s best to keep meats at a minimum. If you do serve meat think pork and lamb (rather than beef) and think about a few slices on a skewer in lieu of a huge slab of steak.
6. Catch Of The Day: Seafood is a staple of the Mediterranean diet, and a healthier alternative to poultry and meat when it comes to your daily dose of protein. So, make sure there’s a variety to choose from.
7. Cheesy Ideas: Think feta and other goat cheeses and add yogurt based items such as tzatziki sauce or kefir to your selection….and, for dessert, frozen yogurt or seasonal yogurt parfaits.
8. Chew The Fat: Add healthy fats to your fare with plenty of olive oil, canola oil, nuts and avocados.
